Thawed Hatch chiles

They will be going in enchiladas that will be eaten Friday. I thought they would be fine, and I normally don't worry about stuff like that. If its not visually bad and doesn't smell bad, I'm usually a go with any foods. But somewhere I had read about bacteria that can grow on roasted chiles within a few days.

Thawed Hatch chiles

A month or so ago I roasted a bunch of Hatch chiles and froze them in usable portions. Last Saturday I took a bag out to defrost to use Sunday. Never got around to it. Here it is Wednesday and not sure if I should use the defrosted chiles. I had read that you need to use them within two days of roasting them, does the same apply to roasted chiles that had been frozen?

That is quite the premium for them to roast them. 3 bucks more per pound for roasted? Having never done it myself, is roasting them at home that difficult?

Older Weber Genesis Silver B

I had posted a while back about buying a gasser...long story short I didn't. Still have my kettle and I use most weekends, love it. For weeknights though I want a gas grill. Was looking at the new Webers, I'm in the Spirit range financially...and they don't seem like the best quality anymore...If anyone remembers from my original post I've been through 3 CharBroils in the same time I've had my kettle. Is the Weber in the same catagory now? My question is........I've come across an older Weber Genesis Silver B on craigslist....new on it are SS burners, cast iron grates, flavor bars...plus cover and two tanks full....it looks brand new...and asking $350. From what I've read it must be a 2000-2003 grill....seems kinda steep...but like I said it looks brand new and all the essentials are replaced.....What say you? Good deal or keep looking? sorry for the long post

KBQ is open again in a new location. First thing I noticed walking in was the lack of smoke smell, or BBQ smell. I tried the brisket, zero smoke ring, kind of dry..was pretty good, but nothing I couldn't make in the oven. My buddy had the pulled pork..said it was good but again kinda dry. I will say that their BBQ sauce is very good, and the white sauce was very good. But good BBQ shouldn't have to be covered up in sauce, and this did. I asked if things were cooked on site and they said yes, but even with an electric smoker wouldn't you think you'd smell it? I will try it again because I work so close, but this is no where I'd drive for......I don't see this place lasting very long.

Mission BBQ - Glen Burnie

Was in Glen Burnie on Saturday and swung by Mission BBQ. I'd heard good things so we gave it a try. Was very busy, but our order was right up. Great staff...wasn't sure what sauce to try so they gave us some of all of them....We got two racks of ribs, brisket, mac n cheese...The ribs were pretty dry, my family said the ones I do on the old Weber are much better. The brisket was good..I like them a little fattier, but the flavor was there...so tender. The mac n cheese could have come out of a box...non descript. I do have to say that this was carry out...and about a half hour drive home...so maybe eating there the ribs might have been better....I'm gonna give it another try eating there....

On a side note.....KBQ is open again. This time in Lanham (how this is called Lanham I have no idea..it's really Largo). It's in the same shopping center as the Wegmans. Haven't tried it yet.

I never see this place mentioned on here. We went I'm thinking close to ten years ago or so....had a family member keeping a boat close by, and I remember having a great time and some delicious spicy seared Ahi Tuna...now it's been awhile, and I'm sure there were lots of cocktails involved.....so my memory may be clouded....is it worth checking out again?

Masha....we always had the ReaLemon as well growing up. Never real lemons. Although my wife still keeps the RealLemon in the fridge to add to water...even though we keep real lemons on hand all the time...go figure

Was throwing together a dinner tonight with whatever I could find in the kitchen. Used cilantro, capers & sriracha to make salmon cakes. These are three ingredients that our house always has on hand....we always make sure we have them....but had never even heard of them growing up. What are your must have on hand staples that you didn't have in the house growing up?

Weber Grills

Thanks for all the input....

Any input on the burners going left to right as to up and down? It seems all the newer Weber grills have the up and down burners...was the old left to right a problem? I was thinking indirect heat cooking....but thats something I'd usually do on the Kettle anyways....any thoughts?

Ray...I'm with you... the Genesis seems like a much more quality grill....but for what I'm going to use it for, not sure it matters....I just need something to not rust out after a year or two. On a side note....I always keep my gas grills under a cover once they've cooled off.

Weber Grills

I hear you Mike...and that's what I'm hearing from some of my BBQ friends...why go gas? Thinking about it...it doesn't seem to take much longer as you said....but by the time I get home from work my girls have already eaten...and to fire up the charcoal for a burger or chicken breast just seems easier on the gasser...plus the cost of lump is more than gas. You've got me thinking though...do I really need it.

Glad they started a grilling/BBQ board...much needed.

Question for you guys....Weber Spirit 310 vs older Genesis 310 (new in box). A little background.....I'm a charcoal/wood guy...love my Weber kettle, have had it for over ten years. It sits outside w/o cover, has never rusted and I use it all year long. I'll never give it up. But I've always had gassers for those weeknight dinners that I don't have time to mess with charcoal. The problem is in the same time I've had my Weber kettle I've been through 3 CharBroil gas grills...they just rust out. So I've decided to buy a Weber gas grill. They never put these things on sale! I came across a Genesis 310 for $469. It's a little bigger than I need for weeknight stuff, but a great deal. Then doing a little research, it must be a 2010 because the burners run left to right, with knobs on side. I'd much rather have the burners run up and down with knobs on front. Question is...am I passing up too good of a deal with the older (new in box) Genesis vs the 2013 Spirit which is running at $499? Sorry for such a long post.

Getting to Grace Garden via bike

None of those roads are very bike friendly, especially 175. dpan has a good suggestion, would only be a 10 minute bike ride from the MARC station. But again, be careful of that section on 175.

I would be more worried about my bike getting stolen while there.

Leftover Gumbo

I made shrimp and sausage gumbo Sunday afternoon, we enjoyed it Sunday and leftovers were going to be eaten for dinner tonight. Plans got in the way and weren't able to eat it tonight and won't for the rest of the week. I say it's okay to freeze now two days later, wife thinks not. Any thoughts? ( it was cooked Sunday, and the leftovers were left to cool on the stove then put in fridge)

Best Burger in Annapolis

I finally made it to Stoney River. What a great burger. They only had the guyere and carmelized onion burger...nothing added just great beef.....fantastic. And the fries were pretty good too. Was 14 bucks and my beer was 5 thought it was worth it....then I looked up online and saw their happy hour prices... 7 for burger and 3 bucks a beer....should have sat in the bar! LaststandChili, do you know if its the same burger at the bar? Either way, I've been there twice in the last two weeks....next time I'll try and be there for happy hour

Cooked White Rice.....how long does it keep?

I have a container of white rice from a take-out place that's a week old. Would you still use it? Was getting ready to throw it out for trash day tomorrow and then I thought some fried rice using the leftover veggies in the fridge with an egg mixed in would be good....just not sure about the rice. It's still in the cardboard container, so it hasn't been sealed tight.

What say you......eat or pitch?

Someone must be eating there...

My Grandmother who passed away last summer at 90 used to love Calvert House. As well as Sir Walter Raleigh in Greenbelt. Got a chuckle out of someone saying Mrs K's Toll House. I remember my brother taking his Senior Prom date there in 1980. He was going big time!

Anyone know if the Golden Bull is still there? Same general area. That place was tacky back in the early 80's, but people loved it.
