Italian Sausage and Sautéed Onion Jalapeño Poppers

Finally made these, they came out great - super simple. My jalapenos were huge, so I had to broil them a little longer. If I have large jalapenos when making poppers again, I may pre-broil them a bit prior to filling them. BONUS: The extra filling I came out with in the end makes an AMAZING (manly, even) BAGEL TOPPING, just saying.

Muffin Pan Popovers

These were pretty exciting (and easy) to make! I goofed on the butter measurement, but they still came out great. Served them with the Harlem Meatloaf and some mashed potatoes, so awesome.

Creamy Pasta with Chicken Sausage and Broccoli

I am currently eating my leftovers, a couple days later, and I am still so in love with this pasta. I only used this recipe as a guideline... I used both Hot Italian and Cajun Andouille sausages, I don't care to know how much Parmesan I dumped into this pasta, and I used a giant onion (because I love onions man). I just wanted to come here, as I round up the last bits of penne from my bowl, to say: Make this pasta. Just do it.

Chocolate Guinness Cupcakes

I too made these for St. Patrick's Day :) I came out with 30 cupcakes also, but I experimented with measurements along the way. For my first batch, I measured about 3 tablespoons of batter per cupcake liner. They didn't rise as well as I had hoped, so for the remaining batches I upped it to about 4 tablespoons of batter per cupcake liner. Everyone loved these, a definite must-bake. (My version http://goo.gl/EK8fJ ) By the way: I used cold Guinness, not even thinking about using all room-temp ingredients. I wonder if that played a role... Question: Should these cupcakes be kept in the fridge because of the amount of cream cheese in the frosting, or are they okay sealed off a room-temp?

Foie in Las Vegas

Thank you Snoozun :) I found your Eater article before I stumbled upon this Chowhound thread, those dishes look great! I would love to check those places out when I'm okay with splurging on a fantastic meal, however, I was also looking for a more casual restaurant that served foie - for not as much.

But I'm thinking... I may just have to indulge. :D

Spicy Oven-Roasted Chickpeas

@Scotia, I had the same problem :\. I found another recipe somewhere that suggested arranging the rack on the bottom. I think I'll try that next time I make this.
