I talked to the sushi chef/co owner and that is exactly the scenario - two latino brothers who worked in Japanese-owned joints for several years and decided to open their own. He seemed knowledgeable and dedicated.

Wood for Smoker?

I agree that green wood can give a bitter taste, and this may not make a great difference for quick or light smoking, but it will for an 8 hour exposure. On the other hand I see some advising buying wood chunks at home depot or hardware stores and then you run the risk of buying wood that's too dry - will burn too fast and have less of the volatile aromatics left. This is naturally even more true of chips which dry out very quickly.

Artichokes on the menu?

I like to braise artichokes - use a heavy pan with a lid, like enameled cast iron, trim the artichokes, place in the pan with some garlic cloves, a little olive oil, a lemon cut and squeezed (I still put the squeezed halves in) and 1/2 inch of water. Place it over a very low flame and cover. It takes 45 minutes to an hour, and i baste every so often, when I remember to.

Braising works even better for stuffed artichokes. I like a couscous stuffing with pinenuts and currents or raisins. First you have to steam the artichokes enough to be able to open up the leaves and remove the choke (microwave works great for this) then shove stuffing where ever you can fit it.

How about Pellegrino at 99 cents a bottle - I noticed it was "on sale" last week at Shaws for $2.49.

They also carry an Italian-style chicken sausage, DeLuigi, which as good as pork.

Where's the Best Fried Chicken in Boston Area?

On the two occasions I have had tried The Coast Cafe's chicken I also thought it was way over cooked, dry and way too dark. That the chicken sits on the pan is no excuse; that is how real fried chicken is made.

Must-try Italian Restaurants in Boston

I agree - I found Grotto unimpressive.

Rialto is a great choice, although more luxurious than thus more expensive than others. I particularly love Erbaluce and La Morra, both wonderful and moderately priced. Erbaluce is a bit more creative while La Morra more traditional.

Fun Restaurant in Boston

Eastern Standard in Kenmore is a big, bustling scene.
Helmand in Cambridge - Afghani food is different but approachable and you can watch them cook in the wood oven.
Casablanca in Harvard square has interesting North African inspired food with grewat small plates and the bar side is rather quaint.

that's not exactly right - he did walk away, but without any money. It turns out that he was over leveraging a rapid expansion and using investments meant to fund new locations for operating expenses. The rent was insane and the amount spent on renovating the space was way more that should have been spent on a moderately priced restaurant. And that's just a few of the problems.

Upper Crust not for me

I had Upper Crust for the first time last night, from their Comm Ave store, and i was totall;y underwhelmed. Unlike many of the above posters experience of over-baked crusts, mine was limp and pale and the toppings (eggplant and ricotta) were incredibly skimpy. What was worse, however, was that the Caesar salad came with a packet of Ken's dressing and croutons that obviously came out of a box.

I live across the street, and I've seen several liquor deliveries and the the dumpster was emptied on Sunday - the dumpster in back, not the construction dumpster in front. Something must be going on, but peeking through the window it sure looks a long way off.

I've been told that fake scallops were punched out of skate wings. I don't know if this is true, it seems like the grain runs the wrong way, but over the years I've heard this many times.

Casablanca - make a meal of a few of the small plates - I had the crispy eggplant Napoleon and the mezze plate the other night and was quite happy. Noir in the Charles Hotel is fun and inexpensive. Scott Robinson has taken over at Grafton Street and has lifted the quality - I especially liked the thin-crust pizzas. Downstairs at Upstairs on the Square is affordable and consistently good.

Me too - I just got back from Erbaluce - the spaghetti alla chittara with summer herb pesto was outstanding. His pasta has just the right chewiness and the pesto was subtle enough so that the flavor of the noodles still came through.
