Help with Caramel Candy Making
I need help figuring out how to make my caramels more stiff and chewy. They tend to be on the softer side. Does too much butter make them soft? Ideally I would like them to have some chew.

Anyone made brownies that calls for creaming butter instead of melting it?
Found a brownies recipe that sounds really good. It call for creaming the butter and sugar together. All the recipes I've used before call for melted butter. If you have an experience with this type of batter please let me know. Not sure what the difference is.

Question about making doughnuts
I'm wondering if anyone has an answer to the following (I will try and ask this so it makes sense):
I've seen instances where risen doughnuts are fried 'to order', like beignets or doughnuts you order off a restaurant menu (made fresh).
How do I work the process of raising the doughnuts and then delaying my frying process to when I want to fry them, without over-proofing them?
I'm completely stumpred by this.

Help me create Bakery Style Spritz/Butter Cookies?
Hopefully someone can help me.
I'm forever in search of the secret behind delicious spritz/butter cookies offered at tons of Bakeries and Deli's.
I'm sure the formulation is quite simple but I can't pinpoint it.
The cookies are buttery, dense, and have almost a marshmallow taste to them.
I would love to recreate these types of cookies.

Doughnut Making Help....Please

I'm a caterer and am interested in making fresh doughnuts for a party I'm doing in September. I will escentially be making the doughnuts on demand as people request them that day.

I was wondering if you guys leave your buttercream filled/iced cakes out at room tempature for extended periods of time?
I get nervous not refrigerating EVERYTHING, but was told it was ok to leave out.
