One week is streching it as they get mushy especially if stored with the sauce. You want to keep them as dry as possible when storing in an air tight container especially after cooking them. Reconstitute them in a colander with hot running water and drain well. Then mix with the sauce.

Yes. Instead of carts you are ordering off a menu and you can take your time and not order everything at once. Most places have pictures on the menu like Sea Harbour Seafood Restaurant in rosemead
The problem with Dim sum is when you get seated you tend to order everything at once since the carts descend on you and 30 minutes later your done.

To me Saimin is a little more saltier and broth more clearer. Ramen a slightly darker broth. Never heard of ramen until I met my wife of japanese decent in california.
I remember 25 cent for a large bowl of saimin. A nickel more you get won ton min.

To deveined shrimp Or Not To deveined shrimp?
Depends on the size of the shrimp and the dish.
Extra small to medium I would not devine if shell removed. Usually these are cooked with shell removed, but are to small to devine anyways.
Medium large to Colossal I would devine if shell removed. If shell not removed I would not devine. I personally eat the shell and all especially if cooked in a sauce like garlic and butter.
