Can I brûlée any custard? My husband wants creme brûlée for Thanksgiving. I have been looking at a maple pumpkin pot de creme. Can I brûlée the pot de creme?

We will be there in June too. We have decided against the wine paring as my husband doesn't drink alcohol and I've heard great things about the non-alcohol options.

DRY CURD COTTAGE CHEESE

Hi, my family uses dry cottage cheese to make a savory (European) strudel I live in Southern Ca. now and ask the dairy department of my supermarket to special order it for me. If I can find farmers cheese I also use that. I think that ricotta has a different texture.

Gherkins?

Hi, This is a canape (I think thats the term I want) - probably from the 1950's. It is spread on crackers. It calls for tuna, olives, gherkins, mushrooms, and a tomato sauce. She mad a note that it should not be a bitter tomato sauce. Being from Pennsylvania in the 1950'a, I am presuming canned mushrooms. She put this on (or next to) her antipasto platter.

I found a old recipe of my mothers and it called for gherkins. I'm not sure what kind of pickles they are.

I have Claussen dills and bread and butter pickles. I also have cornichons. Would any of these work as a substitution?

Ice Cream Recipes

My husband went to a garage sale and bought a Simac Il Gelataio 1600 ice cream maker for $10.00. It's great. It's in perfect shape and makes great ice cream and gelato. I've made maple ice cream and vanilla.
I would like to get some new ideas for flavors for summer.

You might want to try Pho Ha on 385 E Mill St in San Bernardino. The cross street is Waterman. My Vietnamese friends really enjoy it. Also, don'f forget Mijo's on Hole in Riverside for taco's and other Mexican treats.

Sauce for Beef Wellington

Thank you all soo much for your replies. Christmas dinner was a success. The only thing is, I have so many wonderful ideas for sauces that I will have to make Beef Wellington at least once a week. to try them all- with the exception of the buerre blanc.

I was reading a recipe for beef wellington that had a Maderia sauce. Is this traditional? Are there any other sauces that would suffice? Considering I've never tasted Maderia is there something I could use instead?

Need a fabulous Christmas dessert for 2

My husband and I are in the same position as you for Chritmas dinner - the two of us. This year we are having individual Beef Wellingtons' and individual Baked Alaskas for dessert. It's special and a lot of the steps can be done ahead of time, with assembly at the last minute.

I am going to make rum balls for Christmas this year. The recipe calls for vanilla wafer crumbs, however, I would rather use something that is not artifically flavored. Is there a suitable substitution?

You might want to consider Chicken Bouillabaisse with Rouille. It is in the Julia and Company cookbook and listed as a lo cal banquet. I know, I know Julia and lo cal- but it is good. It is a fricasse of chicken with leeks, tomatoes, herbs,and wine, with a garlic and pimento sauce on the side. It will serve 6 people with "ample leftovers".This recipe would not be a problem to increase. It's tasty and the perfect dish for this time of the year. Good luck. I'm sure you will have a great party.
