My mother used to make peking duck at home from scratch, and indeed the process is intricate. The problem is that if it isn't made to order, it should still taste as if it was made to order.

In this case, it tasted like re-heated meat in the fridge...

I tried the peking duck at Great China last night, but found it unimpressive. The meat felt like it was prepared ahead of time and heated up. The skin was pretty good.
