These are delicious and very addicting. I dip the whole bottoms in the melted chocolate and place them upside down to dry.

Boozy Persimmon Pudding

Would it be possible to get an approximate amount of persimmon pulp in cups? The persimmons on my tree are very large and I'm thinking I probably need less, but don't want the pudding to come out the wrong consistency, being too moist or too dry.
I found another recipe that calls for the "booze" which in this case was rum, to be warmed up and poured over the pudding after it is cooked, which is then ignited and served with rum flavored whipped cream.

Dungeness Crab Guacamole with Endive

A tip that really works to keep guacamole from turning brown besides adding lemon or lime juice is to save a pit from the avocado and stick it in the guacamole. I've kept it in a covered bowl in the fridge overnight in this manner and it stayed green the next day!

Roasted Acorn Squash with Wild Rice Stuffing

Havent tried this yet, but when I saw that it called for wild rice mix, I thought of the box mix that includes herbs and seasonings already in it. Is that what you all used or could that be the reason some recipies tasted bland and others did not? Just a thought.

Honey-Mustard Chicken Skewers

At first I thought the recipie directions were mixed up with a recipie for teriaki skewers 'till I saw that you make a honey mustard sauce to dip them in.

Still, sounds like a good marinade, would like to try it, but I agree that they may not take as long to grill as the recipie says.

Can you get iodized kosher salt? I've read somewhere that Iodine is an important nutrient and the only way you can get it is to use iodized salt. Is that true?

I've seen a recipie that gives you the option of adding baking powder if you prefer them fluffier, or omitting it for crispier pancakes. 1/4 t. isn't all that much, though I prefer mine crispy.
