My Cajun MIL taught me to make a dark roux in about 25 minutes. No way would I spend an hour on a roux. Maybe it's with the frequency of rouxs made here where we live, but no one I know would take that long when it's not necessary.

how do YOU cook bacon?!?

Somewhere, on the net while browsing, I saw a video where bacon was cooked in a skillet on top of the stove, covered in water. The water eventually evaporated and the bacon browned and looked crispy and delicious. Has anyone else seen - or tried - this?

What do I do with the olive oil in canned tuna?

Unless I could use it in the dish I was currently making, I'd pitch it. My purchase was for the tuna, the oil is basically a packing method.

Thanks LN. I promise to participate this month as this is one of my top ten essential cookbooks. Have had it since it came out and it has been much used. Used to join in all the time, and even did my 6 month stint as COTM coordinator. Miss it, and I'm coming back. Have not participated in several of the books because of difficulty in finding spices and ingredients and because my husband is a New Orleans native and relishes our regional cookery, plus we have easy access to all kinds of fish and seafood here on the coast. I'm ready!

Who has the Best Po-Boys in South Mississippi?

I love the shrimp and oyster poboys at Bozo's in Pascagoula. And never had a bad meal at Lil Rays. Went to the Schooner once and that was enough. The Tiki has reopened in Gautier and their oyster poboy is delicious, as are their raw and baked oysters fresh out of New Orleans.

A lot of what I make isn't toss and go, takes some pre-prep, except for local favorites like red
beans. I love the Goumet Slow Cooker books 1 and 2. Also Slow Cooked Comfort, Southern Living Slow Cooker, America's Test Kitchen (or CI) Slow Cooking, and several others. Just got Not Your Mother's Slow Cooker last week, seems to be good. Love this thread!

Sure. It's a Rival BBQ Pit Counter Top Roaster and Slow Cooker, 88.00 at Amazon. I bought it for the reason you mentioned; I have only the one oven and a small convection oven. Needed it for holidays, etc., but I use it all the time- plus it doesn't heat up the house! It has a rack, yes. I have cooked hams, large roasts, and pulled pork in it, plus really tender ribs and briskets on occasion. It's large, and would be great as a slow cooker for feeding a crowd. I highly recommend it.

Thanks, and I do love it. One of my slow cookers is a slow roaster and I've really enjoyed it. I have 8 or 9 slow cooker cookbooks that I use often. Working split shifts and kinda crazy, but I can't wait for the sharing to begin.

Restaurant Quality Steak (ribeye)

We order our steaks from Allen Bros when they have special offers, they are fork tender and taste like real steak should taste. Expensive, yes; so we cut back somewhere else.
