i don't have a quality camera, but i'll try.

north korea is known for its dumplings and nengmyun (buckwheat noodles). the key difference in the noodles is that in the south, the buckwheat noodles are thinner and eaten with a spicy marinated raw fish, whereas in the north the noodles are thicker and more chewy and eaten in a soup.

Din Tai Fung - top ten in the world?!

i think the crab meat XLB at DTF HK is excellent. i'm talking about the one in the sivercord building in TST. haven't been to the DTF in causeway bay yet. and the one in whampoa garden which closed was apparantly a franchise. the DTF in singapore was terrible. dumplings were oversteamed. Te DTFs in Taipei are all good. Seoul is bad. i've also tried a number of XLB restaurants in shanghai, and i think the HK DTF is just as good. the key is the skin + the size. just right. fu shing and victoria seafood are tasty, but i like DTFs smaller ones better.

i never tried to book before. i just try and get there before 5pm so that i'm in the first seating. they usually run out of crabs during that first seating.

you're right. it is called jeon. jeon is when u use a flour batter. so pa jeon is spring onion jeon, kimchi jeon is made with kimchi. i prefer the bindaeduk which is the mungbean based pancake. much better, jeon is basically just a flour batter with some scallions thrown in. lots of people love it, but i'm not a fan.

here is a place:

Koong www.koong.co.kr (733-9240): Known for its Duk Mandoo Jungol (rice cake and dumpling stew). Decided to try it after reading a review in the newspaper. Located in the antique and art district of Insa-Dong. Tough to find, so make make sure to get precise directions. The soup base was very good: Beefy, with the right amount of seasonings. The black pepper was plentiful, without being overpowering. The rice cake is uniquely shaped into little round balls. And the dumplings had a thick al dente skin filled with meat, tofu and chives. Very similar to the dumplings at Mandoo Jib (544-3710) in Apkujeong-Dong, but with a slightly different filling - chives instead of kimchi. Worth a trip if you're in the neigborhood. Can visit the antique and art shops after lunch.

A Katz's disappointment

i was there last wed, first time in a long time, and it was fantastic. got a sample from a youngish hispanic cutter, and tipped him US$2. excellent. much better than the corned beef.

haha you're right! we had the pork bun chat. i remember.

again,everyone is different, but i prefer a burger with roughly 15-20% fat content. 25% or higher, and its a bit too rich for me. and when you cook it covered over a very hot flame grill, no flareups and still juicy!

but you're right about the griddle. my cousin also cooks his burgers on a griddle and covers it to seal in the juices. and his burgers are excellent.

i generally don't like cheese on my burgers, but when i do, i prefer bleu or swiss. so your "mille feuille" of butter and blue cheese sounds very appetizing.

yes i have been to da domenico twice. i thought very good, basic, fresh, well prepared ingredients. just like italian should be. but very expensive.

having said that, almost any trattoria in rome is just as good or better. but alas, that is why we have to settle for less. rome is too far away.

agree re lei garden. very strong all around cantonese.

Best Burger in Hong Kong?

very interesting article. i've read and seen many a good burger over the years. and my cousin has a small hamburger chain of 7-8 in seoul called smokey burger. he has experimented with a variety of cuts, and he now uses exclusively chuck. we can get into the various subtleties of mixing and fat content, but i've found that freshly ground chuck with 15-20% fat content, loosely formed straight out of the grinder, and cooked over a hot flame is close to perfection. you can go one step further and argue the merits of dry aged and fresh vs a blend of dry aged and fresh. some think a pure dry aged burger is too metallic tasting. i personally think it is a fantastic burger. and peter luger's does a superb job. one of the best bargains as well. last i checked, it was US$5 for a 200 gram dry aged burger. although, they only offer it on weekdays.

anyway, everyone has their own taste. if i had the time and the inclination, i would loosely handform my own freshly ground dry aged 20% fat porterhouse and grill it over a 600 degree fahrenheit flame grill.

i was there on business, so i didn't have much choice in restaurants. but having said that, i always like to look for good italian as it is so rare in hk. i will definitely try cugini next time.

picotin i have to admit was not that great. i just got lucky with a dish that was not on the menu, and was made by a visiting chef. my colleagues steak and foie gras was average at best.

i like the lei garden in chjimes. i haven't been to the one in orchard shopping center. i really think it is better than hk. especially the seafood.

as for the "chow" meet in hk, let me go check the thread again. i can't believe i missed it! i thought it was in sing? let me check now

thx kynd! now that is what i call getting to the point.

i completely agree with u on 6-9. i think lei garden in sing is one of the best cantonese restaurants anywhere. also, i like ponggol nasi lemak and deen mee stall on beach road for soup tulang. i have not tried the others, so i think our tastes may be aligned.

i just got back from sing, and unfortunately was able to try only a few restaurants. but here is a summary:

1. valentino's: so far away! but the pizza was as good as i've had in asia. my linguine with seafood was a bit too tange. but my colleague's homemade fettucine in wild boar ragu was excellent. another colleague's linguine in clam sauce was good, but needed some red pepper flakes. a bit on the mild side.

2. samarkand: i had no choice in the matter as i was taken here by clients, but this was a surprisingly good north indian restaurant in the middle of boat quay. we went to the top floor outdoor patio, which was a fantastic place to sit and dine. the naan was as good as i've had anywhere. and most of the curries were spectacular, especially the chicken tikka, lamb rogan josh, saag paneer and the daal kharni. but the butter chicken curry was almost tasteless. and the samosa's were nothing special.

3. forlino's: very upscale, but the lunch special is reasonably priced. i had the scallop special, which was solid, but not spectacular. the butter/garlic sauce was a bit on the bland side. but the 3-way pork (pork rib, pork sausage, boned, breaded and fried trotters) was unique and tasty - especially the sausage. the trotter was lacking something. needed a lemon squeeze, mustard, or something. the macaroons with a white chocolate cream included in the petits four sec were amazing. and i generally am not a dessert guy.

4. picotin: another one far far away. the pizza was not nearly as good as valentino's, but they had a couple of visiting chefs (friends of the owner's) who had some specials on the board. i tried the stuffed pied au cochon. was not expecting much, but this was as good as i've ever had. it was a largely deboned trotter, stuffed with an interesting combination of mushrooms, breadcrumbs, etc, placed on a bed of mashed, with a brown gravy drizzled over. the stuffing and the mash nicely cut the gooiness of the trotter. also had a reasonable priced 1997 chateauneuf de pape to wash it down.

5. sami's: tried to go to karu's, but too far and i was running out of time. so we doubled back to sami's. the fish head curry seemed a bit more watery and less spicy, but the flavors qwere still spot on.

all i know is that the entire shake em buns burger, both meat and bun, collapsed and fell apart while i was eating it. also, it doesn't taste like 100% beef. it tastes like they mixed in some filler/cereal.

i think fatburger is a solid fast food burger. obviously people have different tastes, but i think it is much better than shake em buns.

finally, main street in stanley is just a solid restaurant with good food. and the burger there is awesome. tastes like ground chuck, maybe 80-85% fat, the right balance of toppings. i like it medium well, otherwise, too juicy. don't put it down once you pick it up and u will have no problems with it falling apart.

some people use a knife and fork.

i didn't like shaked em buns. the burger just fell apart.

and i think fatburger is the best fast food burger in hk.

never tried it myself, but i heard the chinnery makes a good burger. but its not on the menu.

also, i'll reiterate that main street in stanley has one of my alltime favorite burgers.

dakota prime's dry aged burger sunds good. will have to try.
