Hard lime rinds in my marmalade
Hi -- I just made a batch of marmalade with Rangpur limes. The marmalade came out pretty well, I think, except for one thing: the lime rinds all turned really really hard and dry. So the jam part itself tastes great, but then I get this terrible/inedible crunch of rind. I am wondering why this happened? and what I can do to avoid it in the future?
I can't find anything about it in cookbooks or online...the one thing is I think I certainly overcooked the marmalade, but I didn't expect it would cause such consequences!
