QUESTIONS ON PICKLING - TECHNIQUE AND CALCIUM CHLORIDE

This past year I have begun making pickles and preserving.
I recommend the following books:
"Mrs. Wages Home Canning Guide"
"Ball Blue Book-Guide to preserving"
"The Joy of Pickling"--my favorite
"Jean Anderson's Preserving Guide"

I have used pickling lime 3times--cukes-tomatoes must be rinsed 2-3 times

there r differences in taste with fermentation

i believe ball pickle crisp is same is pickling lime(slaked lime)

I think pickles come outbetter and last longer with waterbath method-
not very difficult-just takes time for water to boil-
exttra expense of jars.

Mrs.Wages has excellent supplies as well as Ball

I wasn't going to participate this month but I looked at recipes on the blog-
I plan to make all the pickles and preserves bcz .that is what I at present enjoy preparing.
I bought beautiful green tomatoes with a hit of red blush
I need to purchase jalapenos but everything else I have on hand.

I went shopping at Fresh Market this morning.
I purchased a penascal estate 2009 castilla y leon tempranillo-inexpensive but tasty
I also purchased a sherry vinegar columela solero 30 vinagre de juarez reserva and asmall round of capricho de cabra

I received pu-ehr tea as a gift.
Unfortunately, i do not enjou drinking this tea.
I have 2 1/2 lb unopened bags of tea(in pursuit of tea).
