Any places that serve good offal?

sorry for this measly post, but for gourmet sweet breads, Wink on Lamar offers exquisite sweet breads that melt in your mouth much like scallops, but with a slightly gamy flavor. they are prepared with a slightly sweet sauce and have apparently been a favorite for over 10 years. would highly recommend trying the sweet breads. i think they offer portions in appetizer or entree sizes.

Report on Dallas to San Antonio trip

would agree with you that Shoepfs is not the best in the area by a long shot. the ribs were disgustingly tough and I ordered the turkey which was really just a spam-textured hunk of indistinguishable mass that tasted nothing like real bbq turkey.

3 Nights In Dallas..........

I agree with the other post, Stephen Pyles is a must of something that can really represent Dallas' unique dining scene. I'd recommend Abacus as well. The French Room has a bit of a more snobby atmosphere than the other two, but amazing food to match. Perhaps another good choice would be York Street, as he said. Very cozy place with dishes that have definite care put into them. Sharon Hage is a great chef. York Street generally doesn't get as much acclaim as the others we've discussed.
