Pairing Slow-Cooked Achiote Pork
Bayless recipe basically Bone-in Pork butt roast, Achoite paste, white onion, and lime juice slow cooked for 8 or so hours. Paired it last night with 2007 Seghesio Zin and that went well. Any other ideas, preferably red?
Champagne score...maybe?
I tried a bottle of the Duval-Leroy on Wed. night. Very much alive and well. Gold in color with a slow fine bead. Nose was apples and a little burnt sugar. Taste was sour apples and caramel that gave way to a long wonderfully tart finish. It may have been a tad one dimisional but it was exciting to try the oldest vintage champagne I have ever had. Served it with and without food(truffel tremor, toast points, cured meats) and it was very nice both ways.

I feel a little better now. I am going to try one of the Duval's this week. Any ideas on pairing? I have had older vintage champagne twice and both times thought it was a little rich to have on it's own. Thanks

why would i lie?, i have lurked on chow for about a year and was just looking for some idea about the 1990's. Oh and i think plenty of us shop at stores now that carry high-end bottles.

I happen to walk by a closeout basket at my local grocery store and to my suprise they had 1 bottle of Krug grand reserve and 3 bottles of Duval - Leroy Brut Millesime 1990 Elegance De Champagne for $25 each. I took a chance on condition and bought all 4. Any ideas on the 1990's.? I know it was a great year but these bottles are almost 19 yrs. old.
