They're all still here but she's doing much better. It's been nice to have help cooking but it's also hard to relinquish control of the kitchen at times. Pancakes w/strawberry syrup this morning...and that coffee drink again.

My eating has been pathetic recently:
Breakfast = coffee, honey nut cheerios, coffee...coff(oh I said that...)
Lunch = reheated pillsbury roll with ham, brie and honey mustard, water
Dinner 2nite = white lasagna (all homemade by someone else, pasta and everything)
......All sounds heavy right....!

How Does One Make Killer Popovers?

WOW. super busy! Just came across this thread and while cooking bland meals for people recently (cooking in bulk, on budget for hungry people) I had to respond to this and attach our photo (to remind me of a recent elegant meal)...my husband adds the drippings from the pan (which we cooked a rib roast in for example) and greases the sides of a basic muffin tin with it... then uses his standard classic popover recipe. They're always SO awesome and beautiful! (He'll be making frozen rolls 2nite however!) :(

So weird...I was JUST talking about lobster rolls with my husband and how I wanted to make them this weekend. Then I walked over to my computer and pulled up this thread and landed on this exact post. I think it's a sign... (I've never made them...) Maybe Lobster Rolls and some kind of seafood bisque on the side...

Tonight I stepped out of my 'comfort zone' and made a vegetarian Indian dish, Rava Dosas with Potato Chickpea Masala. Spicy, sweet and authentic tasting, my carnivorous husband loved it! If you're interested...recipe, photos and story are on my blog. Be well.

...aside from a few (too many) post 12AM glasses of bubbly, mine was a pork roll, egg and cheese sandwich on toasted english muffin & cold lemon Gatorade. So much for resolutions! (Is there an award for being the 1st to break?!?!)

I just find the claw meat too sweet, a mix would be nice and I love your idea for placing a piece of claw meat on top of each one...very nice touch/presentation!

What do you make for breakfast on Christmas morning?

Here's the recipe below....

Egg Strata Vermont, Cooking for Company

1 loaf challah or egg bread
1/2 lb thick cut bacon
3/4 -1 cup chopped onion
4 cups thinly sliced and halved Granny Smith Apples
1T Maple syrup
5 eggs (we added closer to 8)
1 extra egg yolk
1 3/4 - 2 cups milk
2 cups heavy cream
1 t salt
1/4 t nutmeg
pinch cayenne pepper
1 t white pepper
8 ounces chevere cheese
4 cups grated Vermont white cheddar
1/4 cup chopped fresh thyme (or basil) or 3T minced rosemary (we did a combo of mostly thyme and a touch of rosemary)
1/4 cup chopped chives
1/4 cup grated Parmesan cheese

- Butter 3-3.5 quart casserole. Cut bread into 3/4 inch cubes. Toast the bread lightly and set aside.
- Sautee bacon over low heat for 3-5 mins, until cooked thru but not crisp. Add onion, apples and maple syrup, sautee 5 mins until onion softens. Remove from heat, drain fat and set aside.
- In large bowl combine eggs, egg yolk, milk, cream, salt, nutmeg, cayenne and white pepper and set aside.
- Cover bottom of casserole w/one layer of the bread, evenly with half the chevere, cheddar, apple mixture, and herbs. Cover w/remaining bread, cheese, apples and herbs. Sprinkle with the Parmesan cheese.
- Pour egg to within one inch the top of the casserole. Let dish rest covered for a few hours or preferably in the fridge overnight.
- Preheat oven to 350, bake uncovered 35-40 min (or longer) until bubbling, puffed and knife inserted into center comes out clean.
- Let sit for 10 minutes before serving. Serve with coffee

It's a make ahead of time, pop in the oven that morning. With juice (fresh squeezed is nice) and coffee..it's just the begining to a full day of eating!

Suggestions for "make ahead" vegetable side dishes for Christmas Eve

Ina's Spinach Gratin...Recipe Below...SO GOOD!

4 tablespoons (1/2 stick) unsalted butter
4 cups chopped yellow onions (2 large)
1/4 cup flour
1/4 teaspoon grated nutmeg
1 cup heavy cream
2 cups milk
3 pounds frozen chopped spinach, defrosted (5 (10-ounce) packages)
1 cup freshly grated Parmesan cheese
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Gruyere cheese

Directions
Preheat the oven to 425 degrees F.

Melt the butter in a heavy-bottomed saute pan over medium heat. Add the onions and saute until translucent, about 15 minutes. Add the flour and nutmeg and cook, stirring, for 2 more minutes. Add the cream and milk and cook until thickened. Squeeze as much liquid as possible from the spinach and add the spinach to the sauce. Add 1/2 cup of the Parmesan cheese and mix well. Season, to taste, with salt and pepper.

Transfer the spinach to a baking dish and sprinkle the remaining 1/2 cup Parmesan and the Gruyere on top. Bake for 20 minutes until hot and bubbly. Serve hot.

I made Scotch Eggs the other day using fresh quail eggs that I boiled and peeled. A somewhat tedious task! Has anyone ever used canned quail eggs? I've seen them but they sort of scare me... Just curious...
