There are so many that I can't even approach this without leaving one off. But Craigie on Main in Cambridge, MA; Reef in Houston, TX; the Salt Lick outside Austin, TX; the Swan Oyster Depot in SF; and the Pig's Ear in Dublin, IE come to mind immediately as memorable places to which I love to return. Oh, and Galatoire's in New Orleans (see my avatar).
My most tattered cookbooks:
"Mastering the Art of French Cooking," of course, and both volumes; a 1960s Better Homes and Gardens cookbook; the old Betty Crocker standby. That doesn't mean I necessarily use them most often these days - just that I inherited them, still use them, and treat them with care.
