You don't really need to roast your own spice mix to make masala chai, infact you will get better results from a packet of dried roasted spices specifically for making masala chai, its what any restaurant serving this in the uk would use. Any Indian food shop will sort you out.

The reason it will never live up to the taste of masala chai from a roadside dhaba in UP is bacause of the milk.. In India it has come from a pale direct from source, and not from a dairy which has pasteurized it etc.

I haven't actually tried Muna's! And I love Eritrean and Ethiopean dishes served with Injera.. Mmmm Zigni!

Usually I go to Marathon at the N7 end of Caledonian road, as I got taken there by an Ethiopean colleague... It's very good. Incidentally the same guy told me that Injera in the UK is very different to the real thing but that he's heard of a restaurant in Tufnell Park (named after a famous freedom fighter) which imports the original flour and makes it with that... Haven't been there yet either though, and have forgotten the name. Anyone else know it?

e2a: A lot of the characteristic flavour of these dishes is in the smoked chilli powder the meat is tossed and dry marinated in. You can get a bit of this to take with you and cook with if you ask in Marathon, and probably Muna's as well. At Marathon, some people just pop in to buy a bag of this stuff for a couple of pounds. There's a proper name for it, though it depends on which local language, they sometimes use the sudanese term shatta but I think that just means chilli powder in arabic.. anyway they know what you mean when you say smoked chilli

Yeah lots of Bangladeshis in Muswell Hill. That general area of north London is really good for food lovers.. within a couple of miles, down the hill to stroud green you've got several v. good restaurants, great turkish and a v good greek - also two of the best realatively cheap Italian places. (Peteks, Trodos Taverna, Porchetta and Pappagone)

I also like my Indian food with the proper amount of chilli. You just have to make it clear when you order - if you don't look Indian they often assume you'll be a typical white English southerner.

Restaurants in the north of England are a bit better because the local food culture has absorbed very hot curry.. but a london restaurant just needs some gentle indication, I always say 'can you tell the chef lots of green chilli pls' and you can tell from the persons reaction if they've understood.

Like I said, manchester, newcastle etc. its a different story, the vindaloo will be ridiculously hot and they will also do a phal which is too hot even for me. Btw the worlds hottest curry is advertised by a restaurant owner in newcatle, its about 7 pounds, but free if you can finish the plate! I have never ordered it but I've heard of people who can finish it, mostly psycho soldier hard man types.

If you want the best traditional english ruby then check out the greedy buddha, wandsworth bridge road.

They're Nepalis doing anglo Indian stuff to a really high standard. V. popular with the locals. Good cooking, and really good quality meat and ingredients.. If you go _in_ before 7.30 you get 25% off the bill, (curry, sidedishes + 3/4 beers comes to £20 with this) so obv getting there at 7.25 is ideal ;-) They sometimes have live jazz

Or you could go for prawns - what does your friend think of those? Basically if its authentic bangladeshi then yeah fish or seafood is going to be the best.

There is another really good one that specialises in seafood in Muswell Hill N10, its on Colney Hatch Lane opposite the main row of shops a few doors along from the chiropractors office.

If we broaden this to the UK, the best south asian in the whole country IMO is an Indian on London Road, Leicester - its called 'The Tiffin' and its more expensive than most other Indian restaurants but the freshness and quality is also head and shoulders above these ones in London we've been discussing. Its traditional north Indian.. amazing..

I've just read this thread with keen interest. I love curry and live in London. Two of the best 3 in the whole city, IME have already been mentioned on this thread: ul tayyab (aka tayyab's) at fieldgate st, whitechapel; and chennai dosa (manor house, and thornton heath, & others?).

Third, and just as good has to be Gifto's Lahori Karahi house, southall which perfects 'lahore' style grilled meats, and cooks side orders just as well to a formula that hasn't changed for 20+ years and hopefully never will.

The best grilled meat in London though is at a lebanese place called beirut express, on edgeware road nr. the junction with star street.

As to what to order: use your own imagination and inititive, everyone likes different things!

Vegetarian at Fridays?

At our company's holiday party, I won a $50 gift certificate to Fridays. Just one problem: I'm a vegetarian (eggs and cheese OK; meat, poultry and fish not OK).

Is there anything at Fridays that a vegetarian could make a meal out of? I know they used to have a garden burger, but that's off the menu now. Also gone is the former spinach pizzadilla thing and some other meal-type appetizers.

I asked them through their Comments section on the Friday's website, but after waiting a week I got this informative response:

Can I prepare ravioli ahead of time?

The vegetarian ones will freeze well, especially if the pasta is an egg pasta. You can also refrigerate them, but make sure to put the pasta on a cotton towel, this keeps the filling from making the pasta soggy on the bottom.

Looking for Taiwanese Sesame Noodles (麻將麵 Ma Jiang Mian) recipe

I used to live in Taiwan where my favorite dish was Ma Jiang Mian, a common local dish that consists of noodles in a warm sesame sauce. It's a little different from cold sesame noodles (Leng Mian) or mainland varieties of the same dish. I have been searching all over the internet but I cannot seem to find a recipe for this dish anywhere, and my Chinese is no longer good enough to translate one into English.

I would be very grateful if anyone could share a recipe for traditional 麻將麵, or translate one that is available on a Taiwanese website.

Arenal Costa Rica

Don Rufino is really, really good and they make a great mojito! A little pricey for Costa Rica if you are on a budget, but worth it and they are not opposed to sharing entrees.

Las Nenes is good for seafood. Soda El Rio is good for tipical food. There is a new steakhouse on the road to San Ramon, I have heard it was good, but I have not tried it yet. Steak is pretty hit and miss in Costa Rica. If you want to combine a meal and hot springs, have your hotel make reservations at Eco-Termales (located across from Baldi). They serve a traditional Costa Rican dinner, along with full use of the springs (at about half the price of Tabacon) but you have to have reservations as they only allow 100 people in the springs per session.
