Wong's In Garden Grove R.I.P.

Good News! The new owners of Wong's/Spicy Claw have made a brilliant move. The East
dining room is dedicated to the "Spicy Claw" menu (Crab, Crawfish, etc.) complete with butcher paper on the tables, and a dedicated menu. The (original) West room remains as it always was
with the red naugahyde booths and the old school Cantonese menu.

I dined there a few weeks ago and the old menu looked and tasted exactly the same.

I'm looking for a Vegan Chinese place in Orange County. I used to go to a great place in Westminster
on Magnolia at Bolsa in the 90's with very good faux Meat, Chicken and Seafood dishes. It's long gone
and I haven't found a similar restaurant.

where to draw the line on "authentic"?

Too many of you who've replied have confused the intent of my post with their personal preferences.
Sure, if you want to put Fois Gras, Kim Chee, Whale Blubber or whatever between Corn Tortillas, it's
still a Taco. But not an authentic one. The Taco I described has been in most parts of Mexico for a long, long time with few regional variations. It will continue to be made this way long after foodies
and their rat bastard fusion-of-month inventions fade into well deserved obscurity.

"Authentic" Taco Definition

There have been several posts here with threads discussing the definition of an "authentic" Taco.
IMO, this is the real deal:

2 Corn Tortillas,heated on a flat top grill. Filled with Meat, Poultry or Vegetable mixture.
Topped with chopped fresh Cilantro and Onions. Some type of Salsa or Pico de Gallo
either in the Taco, or on the side. NO MORE OR NO LESS!!

The fish used for Fish Tacos in Ensenada is Angel Shark, an inexpensive and plentiful
fish in Northern Baja. If they did use Halibut or Snapper (which is really Rockfish), the price
would be double, triple or even quadruple what you paid on your last visit.

ISO OLD SCHOOL CANTONESE IN PALM SPRINGS AREA

I'm looking for a restaurant in the Palm Springs area that prepares "old school" Cantonese style
food (Almond Duck, Chop Suey,Egg Foo Yung, Sweet & Sour Pork, etc.). Someone on this board mentioned Eddies in Cathedral City, but I can't find any more information on that restaurant.

BUMMER IN THE SUMMER:
A few days ago, I pulled up in front of Wong's in anticipation of savoring the "Old School"
Cantonese fare that they do so well. I got out of the car, walked toward the door and noticed
a sign in the window that filled me with dread and despair: "Change of Ownership". What??

I questioned the waitress and was told that a Vietnamese group had bought the business and would be
opened under the name "Spicy Crab". I talked to Mr. Wong a little later, and he wasn't sure if the new owners would keep the same menu or staff. I am doubtful that the entire menu or even part will remain the same.

Hundreds of loyal Wong's customers will be very sad this summer.

Which Corned Beef Should I Buy?

Adding to Sparkareno's post: If you go with the Point Cut, figure on 8 oz raw per 4 oz serving.
If you really want to live large, boil your Potatoes, Carrots and Cabbage in the Borth when the Brisket is done.

I'm cooking 150# for an event tomorrow. Instead of boiling, I use the oven-cooked recipe I got years ago from the Exec. Chef at Santa Anita Racetrack:

1. Place unrinsed Brisket on flat rack in shallow pan, fattiest side up.
2. Add enough water to bottom of pan to where it is just under the rack.
3. Mix equal parts Brown Sugar, Ketchup and Yellow Mustard until smooth.
4. Brush thick coating of mixture on top of Brisket.
5. Cover pan tightly with lid or Parchment Paper and Foil.
6. Roast in 325 degree oven for 3- 4 hours until tender
7. When ready, remove Brisket and keep in warm place until ready to slice.
8. Add drippings and 2 quarts of water to stock or soup pot.
9. Cook Vegetables in order: Potatoes, Carrots and quartered Cabbage until tender.
10. Slice Brisket and serve with Vegetables.

Which Corned Beef Should I Buy?

Skip the fancy-schmancy, way overpriced stuff at the above stores. The best I've found this year is the "Blarney Stone" brand Point Cut Briskit at Stater Bros.Is $1.19 per pound today, but I believe it will go down to less than a dollar when the weekly speciasl come out Wednesday.

Any of the larger grocery stores that cater to a Latino clientele will either have them at the butcher counter or can order one for you. BTW, the "cabeza" is used to make a dish called Lechon,in which
the head is seasoned, roasted and "pulled".
