I have helped Fresh Breeze Organic get going and know the attention to detail they involve themselves in. Their cream is "heavy" cream and is available at a couple of stores in the Seattle area. It has no additives. I worked for Darigold for many years and they never added anything to their heavy cream either. The one thing to avoid is ultra pasteurized cream, or milk for that matter. To me it always tastes burned. All cream should whip well so long as it wasn't homogenized, it doesn't matter how fresh it is.
