Suggestions for Packaging Gifts of Homemade Pate
I made pate for the first time and want to give as gifts for xmas. Other than mason jars, does anyone have suggestions for a bit more elegant packaging? Does container have to have a tight lid/top or could it be given in ramkins wrapped and tied up in colored saran wrap? Or other suggestions? Thanks!
To salt or not to salt
Does anyone have an opinion on whether/when to salt meat and fish. I read conflicting thoughts. Some say to salt right before cooking, others say only salt if there is enough time for the salt to incorporate back into the meat. Others say never salt fish before cooking as it draws out juices. Any thoughts out there?

Mashed potatoes are my absolute favorite thing to eat. Here is a recipe I have used for years with rave reviews
Make enough mashed potatoes for number of guests, (however you prefer your mash)
then add:
I will assume 8 people but you can adjust the recipe for how many you are serving:
2 8 oz pkges of cream cheese
2 cups sour cream
2-3 cloves minced garlic
2 -3 shallots
1/2 stick butter
1 extra large egg
1 8 oz cheddar cheese
Mix all ingredients except cheddar cheese with the potatoes and pour in a casserole dish, top with cheddar cheese and bake at 325 for about 50 minutes.
This is my favorite but I really like the idea of truffles and lobster as suggested in one of the posts!
