Best and worst cooking show set designs

The "set" Ina Garten uses on her current show is actually a kitchen in the barn behind her house in The Hamptons. So it is real and very nice. The old "set" was actually her kitchen in her current home.

Most memorable cafeteria food

I too remember Furrs Cafeteria, but the one we went to as a kid was in OKC. I remember nearly choking to death, literally, on the best chicken fried steak I have ever had to date. I was about 10 or 11 years old, and I probably took to big a bite. They served it with fried potatoes and onions. I always got this meal when we went there. It was a big deal to go there in those times, cause we did not have a lot of money. I remember the live piano player in the dining room, he would do requests. The cashier would strike the xylophone to get someone to carry your tray if you couldn't. Those were good times. Too bad the quality went downhill after time. They closed the OKC site long ago.

What the CLUCK?

How have we come to this? A chicken wing shortage in the USA. Where have all the chickens gone to that belonged to Pilgrims Pride before bankruptcy? Doesn't Tyson distribute chicken wings, along with numerous other manufacturers? Why can't they take up the slack? Man I love me some chicken wings! Prices have nearly doubled for the little morsels. That is all fowled up. Unreal! How do you feel?

Rant: What is WRONG with the canned cranberry people?

I am the only one in my family that eats it. I love it and I am not ashamed to admit it.
Next day sandwich of turkey, dressing and the gelatinus canned creation spread on the bread. Great! (Have eaten it since I was a kid.) My grandmother always had it on the table at Thanksgiving. So there may be something to the tradition / sentimental theory.

Best Sandwich in the World

I don't know about top-grade, but I had an over the top sandwich once called "The Monte Cristo". It was white bread stacked like a club with ham, turkey, swiss and american cheeses. Then it was battered, deep-fried and covered in powdered sugar served with a side of honey for dipping., served with side of fries. I do remember it being pretty good. Should of called it: Heart attack on a plate!

Best Sandwich in the World

I expect the half-life of Cheeze Whiz is close to forever. I would never have thought to use it like that, but it does make the sandwich. I saw a show on Food Network that filmed at a couple of "real" cheesesteak stands in Philidelphia. They both commented on the local preference of a genuine cheesesteak made with cheeze whiz or without. One famous stand uses it, another doesn't. The argument can be solved by your own taste I guess. : )

One more knife question- What are your favorite knives?

I've got an 8" Santuko I have used, but I go to my 8" Chefs knife the most. I do use a 10" bread knife alot. Often have fresh bread around. I always use my deboning knife when prepping fresh whole chickens. Just works better for me.

Rare Pork

I cook loin and thick chops this way. I love it medium. Remains very juicy and can cut with a fork. Have not ever been sick from it. I cook it till internal temp 140 F. Used to hear it had to be 160 F. Might as well put some laces on it and wear as a new shoe. I think your times are right. However I always slow cook on the BBQ grill with radiant heat (opposite side of heat source) or roast mine in oven.

I go to a place in Tulsa, Oklahoma occasionally when I am going through there. It is called SteakStuffers. They make it with the Amaroso roll, onions, sliced beef, provolone. Plus, they add the notably controversial melted cheez-whiz on the sandwich. Man it is is good! I love me some cheez-whiz on my Philly cheesesteak!
