NYT: "A Mathematical Challenge to Obesity"

It's the overproduction of PROCESSED food in the U.S. that's driving the obesity "epidemic." Obesity is the result of the overproduction of insulin, NOT consuming fat, but since "fat = unhealthy" has been drilled into heads for forty years as the result of a biased study people load up on low-fat processed crap and think they're eating healthy. Advertise "low fat!" on the box or bag and people will load up. Never mind that it's usually loaded with sugar, even the "savory" stuff.

Day Care Lunch: Really Need Some Help

Considering what your average toddler will put into his or her mouth if given a chance I don't think "boredom" is an issue here. Is she suddenly refusing to eat anything? Are there certain foods she turns down? I'll admit not being familiar with daycare protocol but I imagine stuff like that does get reported back to you. If you know what she likes, give it to her even if--horrors!--it might be the same thing every day for a while.

On very rare occasions like a birthday or anniversary I'll have a dessert. Otherwise, out of mind.

Something doesn't add up

There's a very simple solution for the cattle silage problem--let them eat grass. Cattle are natural ruminants, plus their poop fertilizes the grass and helps the soil and gets into that whole circle of life thing. Of course Big Agro and Big Oil will never let this happen, but I can dream.

Why don't more Americans use induction?

Since we moved into a condo that has only two burners on a gas stove (the other side is a grill) I've considered getting a portable induction burner to use since there are plugs on both sides of the island and I could put it on top of the grill side. I went for a long time cooking on electric stoves and it's just now, nine months later (insert joke here) that I'm finally comfortable again cooking with gas.

How cool! I want to say that back in the day Vincent and his wife Coral Browne hosted a cooking show but I could be wrong. In any event, can't wait to listen to these!

Kens Italian Dressing & Marinade

Any dressing with oil as its main ingredient, as this is, is going to refrigerate terribly. The only dressings I refrigerate are those with mayo or dairy as the main ingredient. Oil and vinegar dressings do perfectly well in your cupboard. And no, you won't die.

Going no-carb- some modern ideas

What you are describing is a low-carb diet, not a no-carb one. Meat, eggs and fat comprise a no-carb diet--if you want to be anal even an egg has .6 carbs so if you truly want to go no carb you have to ditch the eggs too. You can go on a low-carb board and find numerous recipes and tips and tricks but keep this in mind--with any new way of eating, if you try to recreate the way you used to eat you will fail. The fact that you're already planning cheat days doesn't bode well.

That being said, my all-time favorite low-carb recipe site is Linda Genaw's--I've been using it for years. She's actually honest about how a recipe comes out but will put it up anyway for people to tweak it if it sucks:

Disney chow for foodies

THIS, although if your preferred restaurants don't have a reservation open currently keep trying because there's always cancellations (except maybe Victoria & Albert's, I seriously doubt you could get a reservation there now).

A lot of people recommend Jiko at Animal Kingdom Lodge, but we absolutely loved Boma, the buffet restaurant there. Lots of choices, literally something for everyone, and the food was great. We did both breakfast and dinner there and I would happily return again for either. We also loved Artist Point at the Wilderness Lodge (we had our anniversary dinner there a few years ago). Good Northwest cuisine well presented. But even if your kid's an adventurous eater don't deny him/her the simple joy of a Dole Whip or a cheese dog at Casey's Corner!

Yes, Alamo is temporarily closed, they'll be opening up again in a couple of weeks. And you may like it but I would NEVER recommend Bill's BBQ for anything other than the limeade. That meat has never seen smoke; I highly suspect they boil it.

I've seen this with my dad (78), father-in-law (80 next month) and husband (56). Dad's philosophy is "if you can't nuke it, the hell with it." FIL eats out practically every meal, which kills me because his custom-built house has a kitchen I'd give my left ovary to have and it's NEVER been used. NEVER. My husband doesn't get past nuking canned soup and frozen waffles--if I go away I make sure I put a big pot of something like soup or chili that he can nuke plus some oatmeal so he's not eating out of cans and boxes. Amazingly my 51-year-old brother has become quite an accomplished cook--because his wife doesn't cook and his daughters have no interest in learning.

Can anything good come from cocktail weiners?

Vienna sausages and cocktail weiners are very different creatures. Vienna sausages are soft and quite frankly taste terrible hot--that is, if they don't fall into mush when heated. Cocktail weiners are more rugged and can stand up to heat. Keep them in your cabinet or car for an emergency.
