First time to Mexico
I'll arrive to DF, from there I'll most probably travel towards Chiapas and Palenque, visiting Puebla, Oaxaca and the area of Puerto Escondido on my way. Thinking on flying back to DF from Villahermosa.
I guess this is reasonable for 16 days. Any special food related recommendations in these areas?
First time to Mexico

I'm Spanish, so language should not be a problem and used to trvel on my own, changing plans on the go, using public transport, sleep in good and worst places... I have just 16 days in Mexico, so I prefer to focus on 1-2 places, I like "wasting" time when travelling to adapt to the local pace of things. No problem with trying new/different foods, that's actually one of the things I like most, also learning some local cooking but not in cooking schools...
Not planning to spend a fortune, but ready to pay for what's tryly worth, for example a restaurant not to be missed.
I know DF deserves a trip on its own, but this time I prefer to relax a bit in quieter areas after a tough year with no holidays...

First time to Mexico
This Sunday I'll fly to Mexico and will spend 16 days there.
It's my first time in Mexico and I'm still deciding my itinerary. I'm not that interested in DF and larger cities, I'd rather concentrate in visiting 2-3 of the most authentic regions. Nature, rural life and, of course, good food are my priorities.
Any suggestions/recos are more than welcomed!

Can not agree more Phil, it makes no sense to compare Etxebarri and Mugaritz, excep for one thing I find they share: Víctor and Andoni are two of the most passionate chefs one can find, both are completely devoted to what they believe in.
As you say, some love both (us) others like one or the other, but I believe both deserve recognition for contributing to take food one step ahead.
Hope you can visit Etxebarri soon, I find it exquisite!
