I didn't drink the water, just a few sips of the tea which wasn't memorable. The "oh mu ra e su" sounds tempting.

I alternated the kooksu with bites of kimchi. But yeah, I don't think the noodles should have that Campbell's saturation feeling.

The dduk bok ki that my friend got looked very basic -- just the rice cakes, scallions, chili sauce, and a hardboiled egg sitting on top. I've had it at other places mixed with those, fish cake slices and more vegetables, and without egg. I only took a small bite, but the sauce had that kick.

I didn't catch the name of the dish, but one of my friends got a noodle bowl with broth that looked like it had chili in it and flatter, wider noodles -- I want that next time.

Coffee - the next health drink

Thanks for the article. One accusation that drives me nuts is "coffee stunts your growth". It's wishful thinking from parents who are afraid of having short kids (speaking as a short parent).

I do hear claims about caffeine and bone density, though.

I recently posted, then deleted a review of a new Korean place. I thought it was a tasty and fairly unique find, and I thought I detailed it well. Zero replies in well over 24 hours.

Couldn't help concluding that a) I might have been seen as a spammer or "dilettante" because I don't post much, b) my post sucked, or 3) both! *sniff*

Do you have a favorite soy sauce?

Never heard of this place until friends took me tonight. It's been open since early this year. As far as what's served... the name says it all.

We started off with two types of mandoo. The fried dumplings had a crunchy-chewy wrapper and a meat with scallion filling. The steamed ones had thin yet substantial bread-like wrapping, and the filling was meat plus clear vermicelli - like japchae noodles. Both were hearty starters. We dipped them in a mix of soy sauce, white vinegar, and a sprinkling of chili powder.

D&N also has different types of kalguksu (chewy handmade noodles in mild thick broth). I had the bowl with squid and clams. Not much seafood, but plenty of noodles which seemed to grow in quantity the more I ate!

The sides were simple piles of kimchi and takwan. Overall, a homey and satisfying change of pace from the usual BBQ and soon tofu offerings on El Camino.

I've had fizzy kimchi before. I prefer the stage that's past freshly-made, yet pre-fizz :)

I can't cook!

Not sure if "I can't cook" is an excuse, but sometimes the person sets a high standard for "I CAN cook". One mistake=total failure, etc.

I agree with others here. When it's starts getting a little translucent, it's a little too ripe.

What my husband does at this point: in a soup/stock pot put in kimchi + its juice, add some water (to taste preference) and uncooked pork ribs*, then cover and simmer everything until it's soft to your liking.

If you want, right before you think it's done add fresh tofu chunks, then simmer again until the tofu's heated. Scoop stew into bowls, eat with rice. Very easy, and you're saving the ghost of kimchi past :)

* I've had it with bacon or Spam instead of the ribs. Neither are as good, IMO.
