For a cream or custard based ice cream no issue. I rarely use much sugar. Make sure you keep your machine going long enough to form good base. Once to a soft consistency drop it in the freezer. You should be good to go.

Try to make something like a Orange Sorbet with ginger and Stevia. This counteracts the taste. Best bet for sugar free and not bad for you.

Stevia is fine if you make a acidic based treat. It's aftertaste can be more pronounced than Splenda. There are also a couple of new type sweeteners that work well for baked good, but not so good for frozen. While Splenda is no doubt bad for you it does have the best taste overall.

The sweetener is strictly for taste. You can make a custard based ice cream easy enough. Whole milk add a bunch of egg yolks and some vanila bean. Bring the heat up to a stiff simmer while stirring. Sweeten with whatever you want. I generally use honey but you could even use nothing. Cool the mixture down after it's smooth. I normally dump it in the freezer for a while. Then dump that into your ice cream maker. You can purchase small makers for less than $50. I personally use a batch freezer.

Okay looking at the performer I take it back not a toy but not awesome 3 size burners 25, 18 and 12. Prefer 25 all around. Also electric oven, not my thing but not horrible.

Again looking at the BTU on this one it's a toy. You should simply look at Capital cooking. You can find them around for a discounted price. I paid $5800 no tax free shipping on the 36 inch self clean. All 23k btu burners. The closest to commercial you can get period.

The best of breed is Japan house in Plano http://www.japanhouseplano.com/. This being said none of them come close to "real Sushi" but this is the best of what's out there. Friends have dragged me to many of them in the past.

Where to take my family to eat in Dallas for authentic food of any kind?

For Chinese it might be interesting to take them to Little Sheep 75 & Legacy. They are a hot pot chain out of China. This is the only one in the states. For "Texas" food, Love & War in Texas on Plano Parkway & 75. Another good choice is lockhart smoke house in Downtown Plano.

All the oriental stores will have it.
It's normally less than $3lb at ranch 99 in Plano. I would guess that the viet grocery stores in mid cities / Arlington will have it for about the same price.

Second world market. They have by far the best selection in DFW.

Norma's is okay. Mama's is prefab but not horrible. Love and War in Texas is probably best of bread close in. Obviously many other choices in Dallas.

Third on Smoke. I will add Bolsa, their brunch rocks and their drinks can't be beat.

I would take a pass on Whisky Cake. Their brunch is limited and not on the same par as the others.

Not to mention biscuits and gravy But that is best for another thread. My take on Mesa is it's okay. If it was closer to me, I would go regularly. It's just not on a regular rotation. It just does not strike me as outstanding enough to make that rotation.

Actually some dishes are better at Lazarada than Mesa some are better at Mesa. I believe the Lazaranda generally does a better job with fish. Mesa does a better overall job and is more comfortable. On the other hand if I am already all the way in Oak Cliffe I am probably going to Bolsa :-)

Their mole can also be one of the best in town. I can say that it has been a a little hit or miss lately. I will also say that you wan the premium ceviche. The others are okay, but just not as good.

I don't know that I agree that Mesa is the best mole. I do however think it's very good. Moles in general are very specialized and will greatly differ on your personal taste. I will say there is no Mole in DFW comes anywhere near the red iguana in Salt Lake City.

ISO Fish Head Curry

The fish head curry at Asian delights does not really compare to Blue ginger garden. It is good, but not great. Secret recipe is only good if the owner is there and then only on the weekends. My last visit the food was just not good.

I don't remember fish head current at Lion City, but it's been a while. Their other dishes are good.

The food is okay. The issue I had was all the food was noticeably under spiced. I will likely go and try it again now that they have been cooking for a while.

The other note is that they are very..... small. The booths are not comfortable and their seating is very limited.

The bigger and maybe better food story is that Asian Delights will start serving Filipino dishes next month. Their plan is to really be Asian delights. They currently do Malaysian and Thai, they have hired another chef who will do Filipino food.

The chicken feet are done slightly differently. JS Chen and Hong Kong Royale both are savory with a hint of sweet. Kiran Court is a bit more spicy. I don't remember Maxims.

Wow never had that problem. I have been going to Kazy since he was on Forest. I do think their quality went down a bit when Mr. Kazy died. The quality improved last time I was there.

Dim Sum

While Kirin court does have good Dim Sum it's simply a hassle to eat there. They hoover above you and try to chase you out. I don't blame them it's busy they want the table back. However this does not make for a great experience especially for larger groups.

Which location did you go to? J.S. Chen BBQ on 75 and Legacy has cart service on the weekend. I have hosted large groups at all the DFW Dim Sum places. Hong Kong Royal is good but due to low traffic can have issues. J.S. Chen BBQ is good and high turnover of food. Their Crab fried rice also rocks. We find that JS Chen or HK are better for large groups. Kiran Court is on the borderline of rude trying to move the group along due to their high traffic.

We ate at the top Dim Sum in SF one of the best in the country, and I find that JS Chen BBQ is so close it's not barely worth mentioning the difference. Yes the seafood Dim Sum is better in SF. It's also much more expensive across the board.
