It depends on the city and the retail space and the type of food being served

I've known about the health department, coming into a shop where I frequent, asking all employees to keep their nails VERY SHORT and to continue their practices of washing their hands and using their bare hands.
I'm in total agreement with this policy.

If the OP starts the seeds indoors, in bright sunlight obviously, I think the he/she will be fine....
Transplanted into a well drained area with full sunlight....they grow quickly.

I've always ordered mine "medium" when asked my preference and leave it up to them to prepare it. I just can't imagine the cheese, of your choice, making any difference.

Two days ago....I ordered to take out, from the hostess, waited, and she brought it to me after she double - checked to make sure everything was as ordered.

Several food items have been mentioned on CH that i, previously, had never heard of or tasted. Many posters are highly regarded for their experiences/taste/expertise.
The OP, in this case, and Servong happen to be some of them. If they mention something that they find exemplary then somewhere down the line I'll be trying it.
I'm a huge fan of fish and will drive many miles to a place I've read or heard about that serves something that sounds good to me.
If I arrived only to be served something that was the opposite of what I'd read on one of these boards....
You can be sure i'd bring it to the attention of the my server or the manager and explain why I came and what was wrong.
That's just me.

At the very least you'll say you've had better.
At the very most you'll wish you'd never heard of the thing, like me, who has a craving at least once a week, and have to drive through heavy traffic down the 405 to get it.

Did you, by any chance, talk to someone there who could have explained why your patty melt was completely different than the one you'd read/heard about?
I'm seriously baffled.
Their patty melts have been consistently stellar for a long, long time....they're known for them.

I'm comfortable having spoken with the supervisor of my local health department food handling division.
I highly suggest you do the same thing as you, obviously, are concerned.
I've been told that proper hand washing along with the employee handling the rind while using the knife to cut the cheese is the proper way to do it....no gloves required.
Now, if I can't trust my local department, who can I seriously trust?

Here's the answer to your question. I just called my local cheese shop in the area I live and this cheese shop is well respected.
Cheese shops, given their nature, are inspected very often by their local Department of Health.
They handle the cheese, with bare hands (something I've watched them do hundreds of times) because if you watch them closely....
They handle the rind of the cheese....not the soft or hard part of the cheese.
Employees have been educated and so the response of the the woman behind the counter who said "we don't' wear gloves' is perfectly fine.

So is this a Health Department requirement? In other words should I be calling the Health Department because I watched an employee, overseen by the owner, slicing gouda with bare hands?

A giant well designed closet for all my table/kitchen collected linens, including hangers and an extra maid to keep everything starched and maintained and organized.

I read this thread yesterday and today noticed a man wearing no gloves, cutting cheese. I suppose I'd never noticed before because this place, any many like it, are very upscale and have a good rating here in Los Angeles.
He wasn't using a tissue and his hands were all over the cheese and baguette he was preparing.
I really didn't think anything of it....there was a wash basin a few feet away and I assume he's washed his hands.

I'm in Santa Barbara quite often and the (2) restaurants glbtrtr recommended, Scarlett Begonia and Petit Valentin are two excellent picks.
I also highly recommend Stella Mares.
This is a beautiful French restaurant situated in SB's bird sanctuary by the zoo. It couldn't be a more perfect setting for a young child to watch what's happening outside...especially if you make a reservation in the greenhouse where the setting reflects everything beautiful about Santa Barbara.
Their food is spectacular, the service impeccable and they go out of their way to accommodate even the pickiest of eaters.
It would be my choice with an 8 year old.

It's a 'special event' to me :) and I'd drive from Kahala for it any time of day.

If I'd used that standard to test out what was inside I would have missed out on some incredible food over the years....
Conversely, I've tasted some of the most mediocre food inside some of the most beautiful exteriors.
