Alchemy in south park has great cocktails and make alot of there own infusions etc. I believe every 1st. sunday of the month they have silent movies and prohibition era drinks, been there once and it was great. They also had a jazz singer accompanied by a stand up base, pretty cool.

Jasmine Seafood Restaurant - best of the worst?
I agree my experience was terrible, food was under par service was horrible.It took over 35 min to get first course, then when we were ready to leave the entire staff sat down in the middle of the dining room to eat ! Classic.

Bonewerks glaces @ specialty produce (open to the public @ specific times ask for kellie palermo ) all stock you need. Frozen, but best pure product you can buy. Try and see for your self. Anything on-line D'Artagnan for example. I would vouch for bonewerks though.

Yes you should season your pan, i use clarified butter to cook with as well.
Chicago CH'er in La Jolla and San Diego
Alchemy in south park they are new but I think one of the better offerings, also try linkery, urban solace, sea rocket bistro. 30th st is where its at. Stay away from the gas lamp if you appreciate good reasonably priced foods. Have fun, Da Bears!

Special Chili Ingredient
the freshest ingredients possible! I also like beer and achiote. Rehydrate dry chilis blend em and strain em for your base with some V -8 for a fast rendition.
Reheating Bacon
why reheat it? bacon cools in about 60 sec. I say either leave it @ room temp. or tray it up and fire it in your oven @ work.
White Bean and Andouille Soup?
Of course it does not sound boring, or bland. Soup is all about what you have on hand. The only thing I would do differently is render some bacon cut into small strips or thick lardon. Sautee my veg in the pork fat and finish the soup with a little more chopped thyme and parsley. Garnish the bowls or cups with the crispy bacon. Perfect cold weather dish. Have fun sounds great, now i'm inspired to make bean soup.

I agree, I have to make my own food when I'm craving guancale, or arancini, pork belly canelone. no real itallian around these parts.

not great experience, was'nt terrible but not that authentic. wanted to jump back in the kitchen and make picadillo w/ maduros and fried egg, jamacian meat patties, yucca with chicharron. theres so much more to the carribean food than the cuban sandwhich! Which is from miami by the way.
What went wrong with my Seafood Casserole?
sounds like the steam from the combination of all your ingredients had no where to escape. your potato topping probably acted as insulation not to mention contains its fair share of moisture. i would have prepared potatoes a separate way perhaps, less is more. Also frozen shrimp and especially scallops are often brined or injected with salt solution to increase they're weight. once cooked all the added moisture is released. so even if you drained and dried the added moisture won't come out untill cooked. Most bagged shrimp will say that they have been brined or solution added, scallops can be a bit sneakier, make sure the scallops are " dry " , that term insures the customer that no moisture has been added.

Feeling lazy and uninspired -- need idea/theme for simple cocktail party
To me cocktail parties can be more hectic than just dinner. I always work off of a theme for inspiration. It just depends on how motivated you are, and what to balance as far as pre-fab and work. Any ideas on what direction you want to take? Then it will be much easier to brain storm items that will fall into work or not category.

I agree, the best around, what i'm always on the hunt for. try latin chef in p.b. for the best peruvian i think . hole in the wall joints have all the love.
Cornish Game Hen question
right on with the temp, don't worry hens are good practice. over cooking them are your only real obsticale. im sure you know the rest, I love jamacian "wet jerk" in the oven or kentucky fried game hen! fear does not exist in this dojo! as for the recipies if your interested ican hit you back but yours sounds delicious daniel-son!

you know thats part of the game, i think i enjoy less than 10% of all restaurants I encounter based on soulless food. but i chalk it up and don't return.

don't hate the technique, hate the hack who prepares it badly. like all techniques good chefs are either masterfull or not. french laundry, blue hill, give it a name. poor execution is just that.
Are Bone In Filets really fillets?
i have seen this and have been offered to but it from purveyors. I was told that it was "glued" on to a rib bone with trans glutaminates. Took the sample sold it to a 70 yr. old "v.i.p." he loved it and haven't heard of this monstrosity untill today.
