Lox wings in Jersey ??

I cant thank you enough. Just got back from Livingston with 2lbs of wings. (They charge 7.50 per lb.)

My buds and I will fry them up on Saturday...after emptying the house, opening all the windows, and putting on the AC.

Rachel's would be perfect, but a bit too far away. I'm seriously thinking of driving into NYC with a friend or two and filling up a cooler.

Growing up in Brooklyn, just about every appetizing store carried lox wings. Frying them in butter till the skin got crisp was indeed a treat.

Now they're as rare as a fresh bialy.

Years ago appetizing stores would get WHOLE sides of salmon...with the wings attached. We'd buy those "wings" and fry them, getting the skin crispy. WONDERFUL !!

I know Russ and Daughters still has them, but driving to Manhattan is a pain.

Does anyone know of a place in New Jersey that still offers where wings can be purchased?

I realize this is an older converstaion, but I'm hoping someone is still paying attention.

My second attempt at pickling has produced two MOLDY garlic cloves flosting at the top.. This is addition to the normal ammount of scum. This after two weeks.

My first attempt produced no such problem. I do all the fermentation on the counter top. I add garlic cloves and peppercorns to the brine. I pickle kirbys and tomatoes.

After rinsing well are the tomatoes and pickles safe to eat?

What to buy at Wegmans

I dont know which Wegmans you go to, but if at all convenient, try Shoprite in Bound Brook.

Great Hosher department: store made entrees, fresh meat, BBQ, etc...and a huge (for Jersey) frozen aisle.

Just dont go on Shabat, the (fersh) area is closed.

Chinese roast pork on garlic bread

The restaurant was indeed Herbie's in Lock Sheldrake

...and it was also served in their branch on Flatlands Ave, B'klyn.

After catching the late show at a hotel, we'd drive to Hervies, and yes, stand in line at 2 AM.

I've yet to find a restaurant in NJ that does the sandwich justice.

Where can I find........

I live in central Jersey and I've been searching for some of the fruits that were available to me when I lived in California.

Does anyone know where I can purchase lingonberries, black or red currants or gooseberries?

...and after watching a Scandinavian cooking show on PBS, I'm dying to try cloudberries...any ideas on where to purchase them?

Chinese roast pork on garlic bread

Many years ago in the Catskills a 2AM treat, (and we had to stand in line) was thinly sliced chinese roast pork, served on a garlic hero. The sandwich was made famous at a restaurant in Loch Sheldrake NY, and then appeared at restaurants all through the metro NY area.

Does anyone know where this sandwich is still being served?

Baked, (kippered) salmon

I have stovetop smoker, and I'd like to attemp making what we used to call "kippered" salmon. I think that now its usually referred to as "baked" salmon.

Can any one give me any ideas?

Baked Farmer Cheese

Growing up in Metro NY I used to have a treat called "Baked Farmer Cheese". It came in many flavors, (my favorites being blueberry, and apple). In retrospect it reminded me of crustless cheesecake. Now not only does has treat disappeared, but even most of the stores that sold it seem to be gone.

Does anyone have a recipe for this ? More importantly, since I'm now diabetic...can this be made with Splenda, rather than sugar.

Your help would be much appreciated.

Acme Smoked Fish

I'll be hosting a post Bar Mitzvah brunch on Memorial Day weekend.

Hosting 30 hungry out of towners smoke fish is gonna cost a bundle...particularly since I'll probably buy enouth for 40.

I'll be shlepping to Acme Smoked Fish in Brooklyn, as no such outlet exists in Jersey where I live.

Now for my question:

Does smoked fish have any shelf life? Can the leftovers be frozen.

And more to the point, does Acme still offer the quality and value that has been remarked upon on these borads earlier?
