Recommendation for Indian in South Philly?

IMO, Indian Restaurant is good, not great, and a bit over priced. I would break out of South Philly and hit UCity or the area JUST west of there (like Chaat House, to name but one).

NB: I live in South Philly, lived in Manhattan's Curry Hill for five years and go to UCity for my Indian fix.

Place to eat before Philly Game

Tony Luke's on Oregon will be mobbed but always good. The steaks are well regarded, but I prefer the roast pork with provolone and rabe.

Mint ice cream recipe

OK, I'm back. And fearing the worst. I worked with a nearly identical recipe

The only things I changed?

1) wooden spoon, not heatproof spatula
2) I tempered the eggs first (NB: one yolk broke, so more like 4.5 yolks not 5)

My problem? I never got it to coat the spoon. I am more a cook than a baker, but it appeared to me the eggs broke. I am guessing I whisked too hard, too long or with too much heat - though I did not have it on medium, it was closer to low (gas).

I have it in a bain marie at the moment and will finish it out but I sense failure. What should I have done to get a more custard like consistency, to coat the back of the spoon?

Mint ice cream recipe

It's easier for me to purchase 2c cream than 2.5, so I have taken a stab at recalculating the ratios.

Q1 - Am I far off?
Q2 - How may I need to adjust heat and/or steep time?

2c. heavy cream
3/4c. plus2.5 tsp milk
3/4-1c.fresh mint leaves
1c. sugar
4 large yolks
pinch kosher salt

The Italian Market bodegas I went to all had queso fresco, none had chihuahua and one even looked at me like I was from Mars, so if you have a specific recommendation I will try. In the meantime, I will try the place in RTM, thanks!

copied from a book I got from the library (____ Best Vietnamese and Thai Cooking, I believe). This is a green recipe but I don't see why you couldn't use red.

THAI GREEN CURRY WITH CHICKEN (see below for shrimp)

1.5 c unsw. coconut milk
1 tbsp green curry paste
1 stalk lemongrass, dry outer leaf peeled off, cut in 1" pieces
1 c chicken stock*
2 tbsp fish sauce
3 tbsp sugar
1.2 tsp turmeric
2 lime leaves, julienned
1 lb b/s chicken breast, cubed *
2 c bamboo shoots, blanched 5 mins and drained
1/2 c frozen shelled peas
2 fresh tomatoes (plum), diced
15 Thai basil leaves, halved

heat 1/3 c coconut milk in wok or wide heavy skillet
add curry paste and lemongrass - stir, heat 1 min
add stock, fish sauce, sugar, turmeric, lime leaves - bring to boil
add chicken - 3-5 mins
reduce heat, add milk, bamboo, peas, tomatoes - 3 mins
add basil, stir, serve over rice

*When I did this last week, I used veg stock and shelled fresh shrimp (medium to small, NOT large), cooking till shrimp were pink and found it a fine variation.

help me make chicken stock from a carcas

Last night I roasted a chicken in lemon garlic and parsley. Tonight I would like to take the carcas and make some stock (broth ... there is some meat on the bones after all).

What do I do?

Do I roast the bird first? If so at what temp for how long?

Or do I simply throw the carcas in the pot and cove with water herbs and veggies.
