Papa Kip Chee's Profile

waterfront dining--ray's? emory's? another?

I haven't eaten at Ray's (restaurant), but we did take fmaily to the cafe/bar upstairs and were really sorry we did. The food was bad, especially for the price. I have heard diehard fans say that the restaurant is miles better though... I am not ready to take my chances. Chinooks is decent and consistent.

SEATAC (in-terminal) breakfast?

I have eaten a breakfast cheese plate and a couple of glasses of good wine at Vino Volo (next to Dish D'lish) on occasion. Maybe the wine would help if you desire sleep on the long flight.

Olympic Cocktails

You should include a few recipes that incorporate steroids - then they would be true Olympic cocktails!

Best Thai in Seattle

Didn't think Thaiku was anything special, and actually quite dissapointing. I wouldn't recomend it, or it's sister restaurant across the street 'la carta de oaxaca'... both bland and generally uncharacteristic

Tamarind Tree - gone downhill

I have been to Tamarind Tree a number of times, but find Green Leaf, one block away, much more to my liking.

Laws about selling home made liqueur?

There are definitely laws that surround this topic. Assuming you purchased your base liquor at a retail store, then the tax on the alcohol is paid. The laws that affect you more in the scenario you outlined are resale taxes and liability.

First time in Seattle

I'm with some of the other comments...skip on Matador, and I'd say Carta de Oaxaca too for Mexican. Also, I'd pick Green Leaf over Tamarind Tree if you get down into the Intl District. Definitely Zig-Zag for drinks, and also Hazlewood for interesting cocktails

Having cocktails at my house

muddle mint with any berries that are in season right now, add a dash of simple syrup and some vodka, gin, rum you name it - go wild!

Cocktail with Cynar?

Had a drink with Rye, Cynar and a house-made citrus syrup (simple syrup and fresh orange, or grapefruit zest)...I think that was it...? very tasty! Next time I'll watch the prep closer to see if there are other ingredients.

Best cocktails in Seattle?

ummmm, have my reservations about Ocho, but if you're in that hood, I say take a few side steps to Hazlewood - I think that's where this whole post started...

SEA - Meat Grinder Where?

'Cash and Carry, or a local restaurant supply. Or, http://www.acemart.com/

Brunch at Salty's in W Seattle

Many other nice places to go. The view is nice, but the food for the price, or for the trip for that matter, is not worth it.

Happy hour near Safeco?

Hooverville - right across the street.

Haven't been - post back if it's good! I drive by it all the time, but just haven't made my way in...

Seattle: Outdoor Dining with Dog?

Yes, I think that if you don't raise any big commotion with your dog at an outside table and it's not bothering other people, then it's up to the restaurant staff to either turn their head, or ask you to leave. Really, if you go asking for permission, then someone here in the 'Nanny State' will more than likely recite some rule or coded legislation in detail regarding your obvious ignorance of the law - most likely in a passive-aggressive, third person persona...

I'm not a dog advocate, but I do own a mild-mannered dog, and think that people should lighten up. I hardly think a dog is any more obnoxious than a screaming baby or a toddler tantrum at a restaurant.

Cheers!

Liquors exposed to direct sun light

The flavors in your booze, either naturally there thru fermentation and aging, or added (as in flavored Vodkas), are all delicate and should not be exposed to high heat. As for sunlight, the same goes, naturally colored liquor / liqueurs are susceptible to light oxidation and color and flavor will usually go off in with prolonged exposure.

What are the new cocktails trends for 2008

Yes, it is not magical...just another sweetner. Actually, I don't know if you'd want it to have that much actual agave flavor..? I think someone just found out how to market this product/by-product - more power to them, but I am not yet running out to purchase some overpriced 'simple syrup'.

What are the new cocktails trends for 2008

hmmmmm...incorporate vanilla/maple and you might have some kind of herby pancake thing going?

What are the new cocktails trends for 2008

Asian inspired seems to be big. Shiso leaf for muddling; exotic fruits (mangosteen, guava, passion fruit); teas used in combo with spirit (brewed) or infused into spirits. I like JMF's mention of 'savory' flavors, and inclusions of eggs, flips, etc. Variations of Pisco Sours have popped up places I've been. How about Cachaca...I think it's the next tequila - not just in caipirinhas... The stuff is good, it just needs some finesse to work it into the right recipe.

Good bar equipment website

I have used barproducts.com before...pretty decent, and a good selection

Homemade "Maraschino" Cherries for my Manhattan

Here's a recipe for bourbon-soaked cherries, that starts with dried cherries, which might give it a nice deep flavor vs. the sweet funky cherries you get pre-packed in the store:

good low end liquor

fair enough - I usually randomize the drink options the whole night, if I don't have to drive...and then knowingly pay for the fun the next day!

raw milk in SEA?

Raw milk is legal in WA. I get it at the Ballard Farmers market. Kind of couterintuitive though - it costs so much more for something that has less energy and process inputs... I like it, but really can't decide if it's inflated 'premium' market price is worth it.

good low end liquor

'Grain alcohol'... what do you think is in all those fancy 'premium' vodkas?

It's all ethanol. Drink too much, and you'll feel bad. I don't believe there's a panacea in 100% Agave. To each his own...

Looking for Vancouver/Victoria recommendations

So, we arrived to Victoria harbour and were supposed to be picked up by another party to head to a weekend retreat in Brentwood Bay, but found out the were delays for the others arriving into Victoria airport...Lucky for us! We got to go to Hernandez (almost gave up on finding it...!). What an awesome recommendation and a great experience. We loved the food, and loved talking with the host. We will go back when we're there again!

Brunch Cocktails

How about a Seelbach Cocktail:

7 dashes Angostura bitters
7 dashes Peychaud’s bitters
3/4 - 1 oz. bourbon
½ oz. Cointreau
4 - 5 oz. chilled champagne

Add bourbon, bitters, and triple sec first. Fill rest of glass with champagne. Depending on the size up your flute, you might need to put less bourbon in. Garnish with orange twist.

A few of these and you'll need a nap after that brunch! The bitters addition sounds like overkill, but this drink works so well.

Seedless Rye Bread

We got some at Hans' German Sausage and Deli thisv past weekend (the light/medium dense German type rye - no seeds)

717 SW 148th St
Burien, WA 98166

good low end liquor

Bourbon - Old Forester - ~ $15 / 750 mL
El Jimador Reposado - ~ $20 / 750 mL

Looking for good restaurants in Lake Union section of Seattle

Hiroshi's on Eastlake.

Sea: Locally made artisan cured meats

Stumbled accross Hans' in Burien on the way to Taqueria La Estacion (yum!), also in Burien. What a find - we will be back!

Good fish monger in Seattle?
