This time I ended up with a super simple very nice tofu cheesecake made of soaked cashews and tofu. Crust was just pressed chopped nuts and oil. Simple and good!
super basic question: why do canned beans need to be rinsed?
thanks everyone! I buy Eden Organic BPA-free sodium-free canned beans, and as was mentioned below, some recipes work better with the liquid (in this case seaweed). Just wanted to make sure there weren't any good reasons not to.

the quality of TJs produce doesn't compare to that of what most of us can get elsewhere. Perhaps price alone works for some, but the value of fresh produce is more about taste and quality and freshness and proximity to where it was grown for us.
Unrelatedly, broccoli is probably not worth buying organic according to the dirty dozen/clean fifteen group

We have also recently converted (we're about 3 months in). My advice is to eat as many fruits and veggies as possible, and you'll do fine health-wise. PPK, as already suggested, is a great beginning source of recipes. Enjoy!
