For a multi-tier cake, mousse has trouble holding the weight of the upper tiers so it may not be structurally sound. If you expand your search criteria to say chocolate cake + raspberry buttercream, more options may be available?

Where to buy Vanilla beans and spices
Costco currently has Rodelle brand vanilla beans 10 for approx $10-12. They are moist and in good condition. Unless I plan to make something extra special, these are my go-to vanilla beans.

As a regular at the Hillcrest Mall Farmers' Market, I feel that your post sounds a little harsh. The same sensibility applies whether you're shopping at grocery stores or farmers' markets. You need to know your prices to spot out the deals. Generally speaking, the better deals at this particular market come from purchasing larger quantities. At this week's market day, a 3L basket of roma tomatoes were selling for $4 and Ontario peaches for $6. A few weeks ago at the height of wild blueberries season, I came home with a 3L basket for $20. So yes, I agree buyers beware.

Whole Foods carries Frontier Natural Flavours (http://www.frontiercoop.com) in maple on a regular basis.

The Hillcrest Mall market is traditionally Wednesday mornings only. Though this year it has expanded to Sunday mornings. I have only been on Wednesdays.
The Saturday morning market on Bathurst is inside a school property and has a good list of organic vendors including poultry. That one is year-round. Having said that, I've only been once.

Moving to Thornhill - Looking for some local recommendations please!
I regularly shop at the Wednesday morning farmers' market at Hillcrest Mall (Yonge & 16th) for vegetable and free-range eggs. Just need to pay attention to what's local and what's not.
It is not Thornhill per se, but I also go to Quality Cheese at 111 Jevlan in Vaughan for freshly-made (warm!) ricotta and great prices on their buffalo mozz.
My preferred supermarket in the area is Longo's. The one at Bayview & John is good but the new and really big one up over at Bathurst & Rutherford is fun to visit.
Tavazo for dried fruit and nuts of course! There's one right by Yonge & Clarke though the newer location at Yonge & Major Mac is the one I frequent.

Mapleton's Organic Yogurt- Praise for a Canadian product made in Ontario
If you're visiting the farm, bring a big cooler! The price for yogurt is significantly cheaper than retail. They also have larger container of their ice-cream too as oppose to the tiny 500mL you see in stores. I would say it's a nice stop if you're in the area but otherwise a little out of the way.

There are several different brands of rose syrup to choose from at Arz (Lawrence & Pharmacy). If you want ones made in France, check out The Spice Trader on Queen West. That was the one I used when I made that recipe.
