quick chili sauce for fish

this is a quick and delicious chili sauce recipe that is perfect for grilled fish.

1 cup roughly chopped fresh chili- i usually use cayenne

lime juice of 1 lime
lemon juice of 1 half small lemon
1/4 cup white wine vinegar
1/2 cup water
1 teaspoon sea salt
2 x peeled aged kiwi fruit
1 peeled and pulped mango
1/2 teaspoon grated ginger
pinch of ground nutmeg

bring chili and garlic to boil in water and vinegar. add salt and ginger and simmer for 5 minutes only.stand to cool.place cooled mix into blender.add all other ingredients and puree until smoothish. strain.thin to desired thickness with a 70/30 mix of fresh lime and white wine vinegar respctively. ENJOY!

Better the next day

vindaloo from the local take-out tastes 3 times better the next day....soups are also better the next day in my opinion.

Seeking a very beery apple beer

if you go to your local beer brewing shop you can buy a liquid bittering hop (condensed)in a little dropper bottle.add 1 drop to your lambic and that should give you a better balance.

Hard-Boiled Eggs... Getting On My Nerves!

Once eggs are done, flush with running tap water 30 seconds.
Place egg on it's side on your bench top.Place your palm flat on the egg softly and gently start rolling the egg from your palm to your finger tips and back again.Continue doing this softly adding pressure to the egg until egg shell is completely crushed but its contents still intact. The shell should come off reasonably easy.
