Rufus Teague Touch 'O Heat is excellent. It's available locally at my grocery store, but it's on Amazon, too, so that might as well be local.

I've seen a company that's advertised both installation and maintenance for box gardens around Dallas at multiple farmers markets and the fair, but I can't remember the name and google hasn't helped. Does anyone remember the name of the company?

The American Christmas Table

Due to our dysfunctional family, I end up at 5 different Christmas dinners between christmas eve and the 26th. theyve all traditionally had a couple meats that usually were turkey and ham with the rare tenderloin plus the usual sides like macaroni/cheese, mashed potatoes, green beans, corn, etc.

as "my generation" (those of us 20-35) have become more involved, i've pushed to change it up some by volunteering to do meats. thats turned into ribs, brisket, smoked turkey. im pushing for an italian theme for christmas dinner this year, but it'll probably take me volunteering to do the entire thing to make it happen.

after the fact but....how do you determine how much turkey to cook??

We had about 30 which included about 10-12 kids (read: under 17)

We smoked a 10lb brisket, a 13lb turkey and a 10lb turkey. We ended up with enough leftover turkey for 4-5 sandwiches and enough brisket for a couple plates.

Haven't seen it in Dallas, but when we lived in Miami I saw it quite a bit in the tourist areas and areas with high concentrations of European folks.

what to do with eggplant?

we use it for a caprese. salt/soak em and then lightly fry with breadcrumbs. stack with mozzarella, tomatoes, basil and top with a little balsamic vinegar.

40 miles from home to the restaurant. I need to make a day trip out of it and find some more stuff to do in Fort Worth. Now that baseball season is done, I rarely venture past 35 if I'm not at work.

Been back for a few months after spending the last 4 years in South Florida. I'm missing the small, family-owned Italian joints more than anything else. Why does Dallas have to be full of the same, boring manicotti, chicken parm and spaghetti places?

My favorite restaurant down there was 5 tables, run by a family from Naples where mama made the pasta each day, the kids waited the tables and another family member helped prep in the back. Escarole and beans, eggplant caprese, linguini with clams. Nothing innovative, but it was all from scratch and all fantastic. I've been back to a few places I used to love like Pietro's off lower Greenville and it hasn't been anywhere close to as good as I remember.

What do you drink at a wedding?

Beer and more beer.

Only a few tables, run by a family from Naples (italy, not florida). Not really a set menu, but more of a "heres what i have tonight, what do you like?". excellent stuff. housemade pastas for the dishes.
