Further thanks to Miss Priss. A decade-long search ended! Were she a neighbor and a beanie, I would offer one of my seven cassoulets. My Christmas pudding preparation time will be cut by 80% and she will be in my thoughts with much gratitude.

Beef Cut Quandary
Very informative and thanks to you all. I searched far and wide for flap steak, found it at Niman and was shocked by the price. Searched further and La Cense, an outfit in Dillon, Montana, finally came to my search engine; bought the steak(s), they arrived two days ago, we had one last night: absolutely superb, one of the best pieces of beef I have ever had. I recommend this source highly.

Take advantage of frequent sales and occasional free shipping to stock up on very decent burgers for your freezer and for meatloaf. Hot Dogs and Bratwursts in the freezer are also good resources for lazy nights..
Haute Cuisine in Montréal?
The restaurants I was referring to were visited in the late 50's and 60's, and the most recent the original Four Seasons on Montreal. I have lived in New York and Europe most of the time since - the latter with still a fair number of restaurants in the classic style - high quality and variety of ingredients, skill in preparation, professionalism in service. While never chock-a-block, there was a fair number in these two cities and I wondered if any had survived. Doesn't look good!

Are there any temples gastronomiques in Montréal? I seek classic cuisine, meticulously prepared and professionally served. Both Montréal and Quebec City had such restaurants at one time; are they a thing of the past? Do I search in vain?
