Stupid easy recipes you really love

I do something similar, with chicken tenderloins. Cover them in canned stewed tomatoes (or try the fire-roasted kind!) and bake, covered, until done. It is INCREDIBLY tender due to the acidity in the tomatoes and moisture. Perfect with rice and green beans or some such combo.

Help! I am trying to like beets but struggling. Healthy ideas?

Beet mashed potatoes! Cook some beets along with your potatoes, then proceed as if you are making regular mashed potatoes. Puree the beets to mix in, and voila! Hot pink mashed potatoes that are SO flavorful.

What is your favorite rhubarb recipe?

I've started making a Stuffed Butternut Squash recipe that involves rhubarb, and it is SO GOOD. It has that sweet/savory piquant thing going on, and uses fresh, local sausage too, which is always an awesome addition. Deglase with vinegar.... Mmmmm. Here's the recipe:

Black Radishes?

I discovered a couple years back that I LOVE sauteed radishes. They turn sweet-ish and are really great sauteed with onions and radish greens for a delicious side of veggies.

Grits. I joke that my second child was made of grits, because I ate a bowl every single night at about 2 am when I was pregnant with him.

Need breakfast ideas with a few restrictions (okay, maybe a lot)

We have shakes for breakfast over here. I mix GreensFirst with Dream Protein and simply shake it up with water. Mid-morning I'll have a boiled egg and an apple or something of that nature.

Sometimes we have oatmeal - I'll fix a big batch, then you simply reheat your portion and sprinkle on some fresh walnuts and raisins.

Your Favorite Fruit Pie Recipe?

My favorite fruit pie is a nice tart Granny Smith and fresh cranberry pie, with a pecan crumble topping. It's insane how good it is!

What's your favorite no-salt or extremely low-salt flavoring?

I really love using Herbes de Provence. I do use a pinch of salt with it, but it's so flavorful alone too.

Nutritional yeast is a great idea. I need to pick some up.

I like to do things like cook a batch of beans, and fix them up in several different ways. Also, I keep high quality canned salmon on hand for those types of days - Natural Sea brand is really yummy, and makes an awesome topping for a salad with some dressing.

You can do the old standbys, like lasagnas and enchiladas, frozen on the weekend and ready to heat/cook at dinner time.

But my favorite tactic is to use my crock pot. Load it and turn it on in the morning, and you can literally eat dinner before you've even hung up your coat when you get home.

What frosting would go with this cake?

I like to beat softened cream cheese with pure maple syrup, adjusting the amounts to get an icing consistency. It's so simple and GOOD, and relatively healthy. It would be AWE.SOME on a pumpkin-chocolate cake. Ahhhhh...

What to do with canned salmon?

If it's high quality, like Natural Sea brand (Mmmm!), then I just put it on some salad greens, with a lemony vinaigrette. Another great option is to do a simple pasta salad, with a lemon dressing, capers, some blanched veggies, and the salmon.

Oooh, and omelets with salmon and some fresh herbs, some mild goat cheese, and some whole grain toast. I'm making myself hungry. :)

Can mealy apples be saved?

I would simply make some stewed apples, with butter and allspice or cinnamon, and a smidge of sugar. We have that as a side dish to accompany pork chops at my house, usually with fresh green beans, also. It's always disappointing to get mealy apples, but they'll be yummy when cooked.

DH hates cilantro, cucumbers and bell peppers. Substitutions?

I think the parsley sub for the cilantro is great, and I agree with the suggestion of adding some lemon or lime juice to sparkle it up a bit.

If the peppers are raw in a recipe, try jicama, as the flavor is not overpowering, though it has a little kick to it, and it's VERY crunchy. Also, radishes might work in some recipes.

If the peppers are in a cooked recipe, I personally would just add extra tomatoes or stewed tomatoes, to make up the difference. They have similar consistencies when cooked.

New crockpot user

I also make it exactly as I would in a stockpot. I do mine on the low setting, though, as the low is quite hot. Putting it on high, it soon gets to a fairly hard boil.

I also take the easy route, and let what I'm cooking make its own stock (ie, chicken breasts or something like that), then remove the stock veggies and add fresh veggies near the end of the cooking time.

I really love Counter Culture coffee. It's based in Eastern NC, I believe, so I don't know how widely available it is. I'm sure you could find it online somewhere. It's really excellent. Though, I must say, I'm entranced with the idea of home roasting. I'm going to look into that. :)

Oh, and of course there's always a Granny Smith apple pie with cranberries in it, and struesel topping over the top. Ahhhh, pure heaven!

Overcooked Tuna...Any Way To Salvage?

Mmm, that tuna salad sounds awesome!

I was thinking about a deep dish tuna pie. You just cook some onions/potatoes in milk, add whatever medley of veggies appeals to you, add the tuna, and put it in a deep casserole, covered with some homemade pie crust. Super easy, homemade pie of delightful comfort food.

2 meyer lemons, what would you do?

I saw something on tv a couple weeks ago where a guy was making a new-fangled version of hummus, using meyer lemons and rosemary. It looked pretty darn good.

I LOVE using my crock pot. I'm making a winter style beef stew in mine today, that has kale and white beans in it. I use the crock pot at least once a week. Love it!!

Can someone help me use up stuff in my fridge?

It could be yummy to bake the butternut squash, and saute the sausage with the beet green, then scoop out the squash, gently mix it into the saute, and stuff the squash shells. Mmmm.

The carrots/celery/onion/parsley and chicken will make you a nice soup to recover with. If you have some fresh garlic, throw in as much as you can - it will boost your immune system.

This is exactly the kind of scenario I made my meal planner for, to help people figure out what to do with their veggies. I'm still building up the database of recipes, and think I'll go now to add the butternut squash idea in. Did you get your veggies from a CSA?
