After roasting some lovely organic red beets last night I forgot to refrigerate them.

Do they need to be thrown away now?

My guess, yes. Since they are starchy like potatoes and left out potatoes are a no-no.

Thoughts?

I store mine whole in the freezer. Defrost and trim as needed.

I'm in need of ideas for weekly meal planning that is not too much for just 2.

I am okay with having leftovers for the next day only or a dish that I can freeze & my husband can take it to work & reheat.

I am trying to reduce my waste & lose a few pounds.

Not to hijack this thread, but when does the Farmer's Market take place in Sedona?
We'll be there next month & it would be great to visit since living in Las Vegas we lack such goodies.

Whole Foods, Trader Joes and/or Fresh & Easy.

Since it is going to be my husband & a few friends, I figured let's not have a whole sit down meal, but rather all of the things that we like to eat & can munch on most of the late afternoon/evening. So, this is what I've come up with so far:

Assorted Cheeses- Humboldt Fog, English Cheddar, Manchego
(with fruit/membrillo paste/fig jam,marcona almonds)
***I'll add a few more my next trip to the store

Assorted Cured Meats

Marinated Artichokes

Assorted Greek Olives

Duck Pate

Crudite Platter- (figured there needed to be some veg like matter)
***I need a dip or sauce still

Beef Tenderloin Roast- Thought I'd roast it, slice thinly & serve with some small rolls/horseradish mayo or cream & arugula
***Any other suggestions?

Rack of Lamb- Cut into individual chops, served with a mint chimmichurri

Cuban Flan for Dessert

***The idea is to graze for the later part of the day, so I need things that won't be affected too greatly by sitting at room temp....

It depends on what you are looking for. Both offer completely different styles of pizza.
One more NY style, the other true Italian neopolitan style.

I say you do a bit of a pizza tour & have both.
