greygarious, your suggestions are helpful and make sense. I'm not being able to think real well right now so after such a disappointment and the past month of little sleep and turmoil I needed someone with a clear head. thank you very much, I'll do just that and hope it's salvageable.

started taping this from the get go and found myself ***mech*** usually (so) fast forwarded it often. really enjoy it now most of the time and think they're pretty hysterical. love Clinton and Michael and how they banter with each other.

yesterday I watched a taped Chew and it was about sandwiches. there were 3 contestants that featured their favorite chicken sandwiches. the winner made chicken salad topped lettuce, so there must have been more to it that I hadn't heard. anyway, CCMM&D all seemed to like the end result once she made it on the show. soooo, I made it. end of the story is husband dumped his whole dinner which also included rice and COTC. nly thing he ate was the corn. my dilemma, what do I do to repurpose the chicken salad? ingredient: chicken, red onion, pablona peppers, golden raisins, pecans, with a glaze of: honey, balsamic glaze, yellow mustard and mayo. so you mix all of the glaze together, and all of the other ingreds for the chix salad together, then pour the glaze over chix salad and toss, top lettuce leaf with chix salad and slice tomato, done.
since this was an obvious bom at my house and since I have so much leftover chix salad, what to do with it? no sandwich suggestions will work, can I do anything else with this sweet/tangy chicken? stir fry? some sort of casserole? I mean it's sweet so that limits my ideas by a ton. TIA

Cooking for one with limited left overs

did the cooking for 1 for 14 months when I temporarily moved out of state.
cooking/baking is my favorite thing to do in fact my passion so getting in the kitchen/going to the market/organizing ideas for meals wasn't a chore. but I did find it hard to portion out only what I wanted for a meal and not overcook.

pastas as many others have said are a good choice. marinating a couple pieces of chicken, a steak or 2 or 2 pork chops then freezing individual portions worked well for me because you take out only what you want to defrost.

MIL got me started on Seal•A•Meals a hundred years ago and have been such a big fan ever since figuring out best way to package the so they'd lie flat in freezer. into boiling water for 18 minutes and you have a good representation of the batch of pilaf or chicken noodle soup or chili or pasta sauce you made. also I can't eat a whole chicken breast but I can freeze half of it for another meal and repurpose it maybe into something else like cut it up for a chicken salad or? Lidia B's basic marinara sauce is pretty dang good-easy and quick to make plus freezes nicely once again into S-A-M vacuum bags.

Ideas for side dishes for Thanksgiving?

watched a show today that featured a twice baked potato casserole. baked a batch of large potatoes scooped out the innards, mashed it to break up clumps and started adding all things that you'd use making twice baked potatoes. chives, sour cream, bacon, cheddar cheese, seasoned salt, pepper, etc etc. baked it to get a great crust. I'll do it one day myself.

the pita I made yesterday for dinner last night was a beautiful recipe/dough feel but "didn't > pocket". originator said to hold down with a thick clean towel if it had many tiny holes to flatten it out, but there was no pocket so we filled the falafel by putting all on top and using the fold method. was very disappointed. guess I'd better look up new pita bread recipe that guarantees pockets.

love caraway seeds, found caraway flour, no lie, yesterday in a market in Valencia, Family Harvest Farm or something like that, have to look at REALLY long receipt for correct name. I do already have rye flour maybe that Red Bob Bills or whatever it's called in the freezer.

was surprised that they didn't have falafel already mixed up and ready in the deli section, especially since this marvelous establishment had everything else.

and for OP, I did also purchase white hulled sesame seeds yesterday and brand new oil for attempting home made tahini. in the market reported above there was an abundant amount of tahini's to choose from but read how apparently easy it is to make your own tahini so I bought the two things needed. maybe I'll like the stuff but bet I won't. as far as hummus goes, love making the stuff, love eating the stuff, gotta get to Tel Aviv but hubby says no, not at "this time".

thin sliced > radish/onion/lettuce/tomatoes/string cheese peeled thin

what a great dinner, all by hand alll home made-very special

only thing about my falafel that was fattening was of course the grapeseed oil it got quickly fried in

didn't do large amount at all since it was first time, didn't want to overdue, he may not like it at all but is an avid lover of lemon. we'll see. I've left orange peels in things too long and ruined them as well.

you know Florida Hound, some times it just good to admit the truth. I once bought a case of Hellman's quart sized jars because on shelf the price was waaaay wrong so I got a clerk and said I'll take a case.
I really love mayo and I just bought a 1/2 gallon Best Foods at Costco and then bought also a gallon sized jar of their brand for comparison. hum, I guess I can afford to use a small scant quart just for the experiment.
and we do love our condiments

ok tuna made a few hours ago.
did all including lemon juice and zest plus all things and many extras. it's hard to leave well enough alone but tomorrow time will tell how well I did when he takes it for lunch via the bread it sits on. we'll see.

our little guys birthday party was at the park. they did buckets of fried chicken chips&dips, relish trays and soda, water, juice in galvanized trash cans full of ice-
I'll note however this party was intended for the child's little friends&their family plus our family including adults.

hahaha, we head there about every year and a half. love the area, beautiful. love the offerings there even other than food. we were just very fortunate to meet this incredible family and they took to us and we to them. they make all their butter, cream, yogurt, sour cream etc which I'm fascinated with.
