I apologize for not explaining more clearly, YES, bagel should be parallel to cutting surface - i.e. on it's bottom, with top up - in a horizontal position. After initial cut is made, then it is moved to a perpendicular position and cut is completed. Because the bagel is still being held by the left hand, it is secured and will not fall and knife will not slip. This is the safest way.

Use a sharp serrated bread knife; set the bagel flat on a cutting board (on its bottom); with your left hand hold the bagel in place with the palm of your hand, pointing your fingers and thumb up as far as possible (this assumes you are a right handed cutter - otherwise reverse); take knife in right hand and cut into bagel about an inch; then move bagel into a position perpendicular to the cutting board (on its side) and then complete the cut with the knife while holding your left hand over the top of the blade but still holding onto the bagel.

To Roast or Not to Roast Bones for Chicken Stock?

Roasting chicken bones prior to starting your stock will give you a rich dark (or "brown") stock - excellent for use in gravy or sauces or as a soup base. However, a typical chicken soup base would not have a brown stock. When you roast bones and vegetables for soup, use a shallow pan, season with salt and pepper and place in hot oven. There should be enough room to allow for browning and not steaming or braising. Turn as necessary. Roast carrots and onion (skin on) but do not add celery to pan(s) as it has too much water and will cause other vegetables to braise rather than brown or roast.

Just ordered and consumed a 30lb box of oysters from water street seafood in apalachicola - grilled some and served with a rouille sauce and had others on the half shell - everyone loved them!

Apalachicola Oysters - looking for best fresh oysters to ship to Michigan

Does anyone know how - or if - the Apalachicola oysters have been affected by the BP spill? Last year we ordered a sack for Thanksgiving and would love to do again this year but i'm wondering if maybe I should be looking elsewhere.

Bamboo Rice

5/16/09 We just prepared and tasted jade green rice (or green jade rice?) per directions on package: bring 1 cup rice and 1 1/2 cup water to boil, reduce heat to low, cover and cook 20 minutes (quick!!). Fluff rice with fork - it will remain somewhat sticky so I think it would be great for molding also. The rice, which I understand is infused with some sort of bamboo extract, has a beautiful color and delicate flavor. The price of $5.89 per pound is high, but worth the splurge for something special. (Enough for 2 servings was just under $3.)
