ferran adria product: trisol; substitutes or places this is sold?
i've been reading about ferran adria's texturas series of products (http://www.albertyferranadria.com/eng/texturas.html) and was wondering about trisol.
basically, it's a wheat derivative that you use in place of regular flour when deep frying and it's supposed to keep things crispy under extreme circumstances.
i'm planning on frying chicken for a large group of people and thought this might be a good idea, however didn't know if there was a less expensive method of keeping it crispy, or if i had to buy it, where i could get it in LA.

yeah, i was so tired of cupcakes until i had this.

also, their macarons are the macaron equivalent of crumbs cupcakes: huge, relatively cheap, not super great, but way over the top.

Best Rib Tips in LA?
you know what's bumming me out super hard?
the fact that so many places only have smothered tips once a week.
both r&r and venni mac in carson only have them tuesdays.
today is wednesday.

the smothered rib tips i had at r&r soul food in carson were pretty damn good, but i haven't had them in a year or so since they changed the menu.
now, the rib tips are only available on tuesdays as a dinner special, which is unfortunate.
Best Microbrew in South Bay or nearby area?
if you're not looking for south bay specific microbrews, i back naja's hard.
some of the stuff they have is more expensive than at other places, however they've got some of the best seasonal brews.
right now, they have the new belgium spring seasonal ahead of schedule.
Marrow Bones and Foie Gras - where to buy?
helpful tip for marrow bones: call the butcher at your local bristol farms early in the morning.
they don't sell the bones from the beef and veal that they butcher down, however they will save them for you.
they're not specifically marrow bone quality bones, as you'd purchase, but they do yield a decent amount of marrow and you can't argue with the fact that they're free.
the last time i did this, they gave me seven or eight pounds for free.
i went at 3 in the afternoon to pick up the ones i had ordered in the morning and the morning butcher had gone home for the day.
the afternoon guy told me that he had just received a new shipment of beef and if i was willing to wait 20 minutes, he'd butcher everything down and give me the rest of the bones.
like i said, the quality can vary, but it's totally worth it.

on a whim, i actually went to the wednesday sm farmer's market and got some.
god, they were awesome with oaxacan mozzarella.

uncle darrow's is shrimp po boy is pretty awesome.
i've had it maybe 20 times and every time it's been great.
i've only had gumbo pot's shrimp po boy once and wasn't too impressed, but it was decent.

ozoni from a restaurant is a tough fit since most good japanese places are closed on new year's day.
if you're down for a good vegan ozoni, i know that shojin in the former mitsuwa plaza downtown was doing a new year's gozen with vegan ozoni.

i fully back that restaurant as the best vegan food i've ever had.
i regularly take my vegetarian and non-veg friends to shojin and they're always impressed, so i would assume the new year's meal is pretty good.

prickly pear information/sources?
i'm really getting into new fruit flavors this summer and i remember having a prickly pear paleta last summer at my favorite paleta shop.
it tasted so wonderfully sweet and familiar, yet i couldn't tag it as being close in flavor to anything in particular besides maybe pomegranate and lemons.
is there a particular season for prickly pears and if so, where can i find them when they're in season?
also, how do you pick them out for ripeness, sweetness, etc.?

Where can I find some Frozen Custard?
they always had problems paying the rent, especially as they tried to run it as a seasonal business, only opening in summer.
last time i talked to the owner, he lost the lease on the el segundo branch and was trying to keep the one in manhattan going, but that one's been gone for a year or two now.
pretty sad, because they did make good custard.

I have a problem with Costco/La Brea Bakery bread
i've never bought lbb from this costco, but for all the times i've been there (which is a lot since i just graduated from loyola marymount down the street), i've always thought that it was one of the weaker costco stores.
they have the highest sales per square foot of any costco and it shows.
that place is a madhouse at all times.
i've always had a feeling they cut corners somewhere, so it would make sense they're getting lazy on the bread.
