Father's Day- What's on the menu?

I have Father's Day love...and your osso bucco sounds great. Unfortunately, here in Florida we've been having 90 plus summer days... I wanted to do a baked ziti or lasagne for my sweetie, but we may have to stick with smoking a pork butt because of the heat (which lets me off the hook because he likes to run the smoker). I'll probably do a grilled red potato salad, something green and a banana pudding.

How many of you would starve?

I agree with you hunting is painfully boring, I've been and have little desire to go again. However, if hungry I would have no problem hunting and butchering the animals. I am lucky enough to have a husband who goes off with the boys to hunt, and I reap the rewards when they return...usually. As I've become more interested in the food I cook and eat with my family, I have certainly become more aware of where it comes from and how it got onto my plate. I feel badly for those who are either unaware or truly don't care. On a side note, I knew someone who once hunted often, and when killed would take a moment to give thanks for that animal. It made a big impression on me at a young age.

Thanks to all of you for your advice. I lucked out and found a Hobart made KA at a local auction, and bought it for a very reasonable price. I have used it several times so far and am loving it, the mixer has a place of honor on my counter. Thanks again.

Thanks... I feel better about taking the KA back to Walmart. I did look at the N-50 online...they are just beautiful, maybe one day. I think I am going to look for a used KA/Hobart, I just want to make sure I don't waste my money. Youv'e been a great help.

Today's First Disaster

Not too many disasters this Thanksgiving. DH burned himself frying the turkey...however that is getting to be a tradition at our house and thankfully it was just a minor burn. Both groups of guests coming over had drama and managed to arrive an hour late...so the ricotta cheese dip appetizer I had planned got bumped from the menu, that way dinner would not wait any longer. I made an apple cake and was doubting myself when the batter looked to thick, so I added some applesauce... I think I should have left it alone. It was a little too wet in the cake. But all in all a great day, enjoyed with family, friends, and our dog.

Which Kitchen Aid Stand Mixer Should I Invest in?

In the craziness of Black Friday I picked up a Kitchen Aid mixer for myself. I have always wanted one and could never justify the expense... until I saw the base models on sale for $149 this morning. Later when I read up on the mixer on some of the boards it seems that the older Hobart produced ones are stronger and more durable. I've been looking at some of the used K5-A mixers on Ebay... I would like one that will last, I probably would use it weekly (I want to learn to grind meat and make sausage) and I already have a spot picked out on my counter top for it. So I just wanted your advice, if you were going to buy one which one would it be? or would it even be a KA? Also are there any problems with connecting newer KA attachments to the older mixers? Thanks for any advice...

Need Help with Glaze for a Gingerbread Cake

A thinner version of my buttercream was what I had envisioned, however I wasn't sure how well it would work (just lack of experience on my part). I will probably play around with it next time I make icing, just so I am more comfortable with it. This is the 4th time I've made the cake (the other times no problems unmolding) but of course being a gift... you know those are the times you have the problems...thanks for the suggestions.

In the midst of the Thanksgiving rush, I am making a house warming gift to drop at a friend's this evening. I made them a Gramercy Tavern Gingerbread cake, when I took it out of the bundt pan a thin top layer of the cake stuck in the pan. I need advice on a thick enough glaze to cover up my boo boo. I don't have time to go out to get ingredients to make another, and I hate to make my glaze because I don't think it will be thick enough to camouflage the ugly top. Do you have any advice?

Sorry for the delay in answering, I have a blueberry farm in Florida. Those are my berries covered in ice during one of our many freezes last winter. We were lucky, only losing a very small percentage to freeze damage.

Low waste kitchens

Lots of great ideas... we use mason jars for most of our food storage both dry and refrigerated (I really like the way pasta and beans look in the large jars). I do have some larger plastic ware that I pull out occasionally. As for storing them, they are kept on a shelf in the garage. We also use cloth napkins and towels almost exclusively, I have to admit we do have paper towels but use only for specific messes. I am jealous of those who have access to a csa's and coops, in our small town we have a Publix and a farm stand. I do buy fresh eggs so no egg cartons wasted there. I have always been a big supporter of buying used books on ebay; at first it was because we could save money that way, but now I can appreciate the idea of reusing books. I don't use ziplocs , but dh is still addicted to them... I am trying to wean him from them. Always have reused foil when I could. I usually buy used my most of my kitchen items at estate sales, auctions, or thrift stores so there is less waste there. The reusable shopping bags are a great idea as long as you are not like the majority of my friends who buy boatloads of them either because they forget them or the new ones are cooler looking.

Glad to give you a smile, my kids and I normally have differing opinions on where things belong. I have to let them get by with some stuff, makes me smile also when I see his huge box by my olive oil.

My pantry is spread throughout 3 rooms; the tiny pantry and cabinets in the kitchen, the freezer and shelves in the garage and a buffet in the dining room.

Kitchen pantry:
Top shelf has surplus items usually bought on sale, such as relish, tomato paste, honey, 3 types of vinegar, corn syrup, tea bags, raisins, horseradish, cocoa, V8, Nutella, and 3 lbs. of white chocolate a friend gifted me.
Second shelf has beans, pasta, 4 types of rice, graham crackers and hush puppy mix.
Third shelf has canned tomatoes, pineapples, other fruit, beans, peppers, tuna fish, maraschino cherries, sardines, herring, anchovies, and a pitcher full of secret candy.
Fourth shelf has oatmeals, several types of crackers, nilla wafers, more raisins, tortillas, sweetened condensed milk, sunflower seeds, granola bars, prunes, popcorn, potatoes and a blue pottery bowl of snacks for my children.
Bottom of pantry has a can of olive oil, cereals, potatoes, more tomatoes, dog cookies, juice, and dog cookies. There is also a box of my son's Legos in there for some reason I cannot fathom.
Garage shelves have extra Tupperware, juice, extra mason jars, gatorade, applesauce, and more juice.
Kitchen cabinet has flours for baking, baking mixes, sugars, cornmeal mix, Crisco, powdered milk and sugar, hot chocolate mix, more pasta, pancake mix, and a crock of vinegar that I am trying to make but seem to be failing at.
Stand up freezer has beef, chicken, pork, gator, and some type of unidentified fish. there is also a variety of nuts, stocks, soups, meatloaf, rubbed wings, nuts, gravies, popsicles, strawberries, blueberries, peaches, tomatoes, peas, greens, shrimp tails, lime juice, white wine, salami, pancetta, sausage, veggies and bones for stock, coffee, pureed watermelon, bread, breadcrumbs, butter, henna for my hair, coconut, bagels, cookie dough, frosting, tomato gravy, pot roast, vodka, gatorade, icecream, chz rinds, biscuits, salt pork, ham hocks, and ground pork that I was going to make into sausage but never got around to.
Buffet has mason jars of chow chow, spicy tomato relish, peach butter, figs in port, granola,and huge bag of animal cookies. I have to admit this summer is the first that I have canned stuff and I am a little scared of opening them up and poisoning my family.

One thing I have learned from Chowhound is how important a pantry is and how to use it... I have to give a big thanks to you guys.

What new food have you discovered recently?

My most recent discovery was goat cheese marinated in olive oil, I found some at a farmer's market...it was so good. The funny thing was I normally don't enjoy goat cheese.

Thanks for the information, I checked out their site...I will most likely order some of the the green chili and garlic pistachios, they sound really good.

ORLANDO VISITOR'S DINING GUIDE - A Hound Perspective - I-Drive/Convention Center

My sister and I had some appetizers at the Funky Monkey Wine Company last night. The food was really great; we sat at the bar and the bartender was very attentive and friendly. I had a glass of wine, the tomato and mozzarella salad and a taste of the the flat bread appetizer. The wine was good, I stuck with what I knew... but the tomato and mozzarella salad was incredible. The tomato and cheese were stacked with a drizzle of balsamic and a sprinkle of basil. Wonderful heirloom tomatoes and a great balsamic made it an excellent dish. Overall a very enjoyable visit, we will certainly return.

Too Many Tomatoes...Need Help

Thanks for the tips, the tomatoes came out great. I have a little jar in my fridge, already used some in my pasta salad, and the rest are in the freezer.

That's funny, with pistachios I'm just the opposite, they have to be in the shell... I love breaking them out of the shell with my teeth. The chili-dusted ones sound intriguing though, I'll check them out next time I stop by Whole Foods.

I love pistachios, in fact the first time I ate them I gave myself a stomach ache. I also adore honeycomb, Nutella, real maple syrup, Margaritaville tortilla chips, and almost any good bread with a smear of butter. Good thick cut bacon and unpitted olives are also dangerous to have around my house.

Tomato gravy was my first thought, but I had just put a good bit in the freezer Sunday before last. I was kinda disappointed that I already had some, making gravy for some reason is very soothing for me...kinda weird, right?

I had not even thought about soup, I start my cream of tomato soup by roasting canned tomatoes, but I'm sure that the fresh ones would be fine. Should I blanch them first to remove the skin or take the skin off after I roast them?

My sweet husband bought me a box of tomatoes from a veggie guy who goes by his shop. Unfortunately he did not check the age too closely, the top ones were good and I have plans for them; however I have about 20 who are older... no real bad spots, but you can tell they are aging quickly. Do you have any great ideas so I can salvage them...I hate to toss them. I thought about canning, but was uncertain about them not being very fresh. Thanks for any ideas...

Food for young kids during a death in the family.

I remember being excited as a child when a relative brought over a tray of little sandwiches. They were filled with tuna salad, egg salad, and probably a ham and chz combo...deviled eggs would also be an easy snack for big ones and little ones alike. We recently went through a funeral and the food that was brought over was such a help...it is very thoughtful of you.
