This recipe seems to be getting some ratings spam, for some odd reason. I usually like to keep subscribed, but the plethora of emails I'm now getting is a tad annoying.

Yep this is pretty good stuff. I make it with sharp cheddar or whatever we have around. I've played with add-ins and found the best combo to be a lb of bacon and a small can of green chilis, drained.

Another good combo would be rotisserie chicken + the green chilis or carmalized onions. If using the onions, top with frenches onions. Love the panko/Parmesan combo on the chile version! I don't bake this - only broil for a few minutes to crisp up the toppings (watch the dish closely if doing this - can burn quickly).

I also add a tbs of mustard powder and sometimes some cayenne or hot sauce to taste. This recipe is very versatile.

Last edit - I mentioned panko/parm combo - just add shredded parm to your panko - delish.

Ok, really last edit - I love Fucilli with this recipe.

Two tablespoons of salt is CRAZY! :). Salt to taste, folks.

Good basic recipe though. Looking forward to trying different cheeses.

There Can Be Only One:Your Single Favorite Taco In Austin.

I will second the Salt Lick Airport taco stand motion here.. except I will go for the pulled pork & egg taco. So good! I've even mentally plotted how to bribe the TSA to run get me one when I wasn't traveling. :D. Fortunately I can make a version that is "close".. but I always try to schedule my flights to arrive at AUS when that stand is open.

Dog Almighty is my favorite although I hear there is only one location left. I loved Wienerschinetzel (sp??) as a kid but the one on Braker Lane doesn't seem to offer up anything special - I'm not going back there.
