Cheese production facility visits in France

I'm doing some research on this right now, but I'm targeting Alain Hess in Beaune. I'm not sure if the production facility has tours (yet), but the store he has downtown sounds incredible.

Six years ago, I stumbled upon Delice de Pommard while I was in the Loire Valley; it's an incredible cheese and I hope to see it production.

If she had just come out and said "Y'all, you know what, I've been eatin' like crap and now I have diabetes -- but I'm gonna come up with new ideas to make that bad food good for ya'" I would've respected the timing. But to coincide with the drug release and to not take responsibility that her food has a linkage to bad health is in...poor taste.

It was the best episode of the season -- I could watch Junior Iron Chef battles every week.

Aria has been going downhill every week, and last night, she just quit. She couldn't cut it. That make-your-own-French-toast was so incredibly lame. It look like bad diner food.

Tom is a bit wacky, and usually has interesting ideas but can't always execute on them. He should've known the pork belly cube wouldn't cook -- that's basic cooking. But at least he knew where paprika came from.

That's not the point -- the fact that he uses cream to "finish" his risotto means he doesn't know how to make a good risotto.

I can't believe that no one pointed out that Brad said, in the first challenge, that "instead of finishing of my risotto with heavy cream, as I always do, I used the ranch dressing." Glad to see he won't be getting his show "The Pro" any time soon.

You may think I'm crazy, but try a calimocho -- coke and red wine. That's something you can't find everywhere, and is actually a lot better than it sounds. Sangria IMO is more expensive than it is worth.

I just saw a preview of "French Cooking at Home" (I think that was the title). That seemed promising, or at least in the right direction. Of course, it was a 30 second set of clips.

I'd be hesitant to jump to a conclusion based on that, considering the time of the year. It isn't tourist season, and when I think fresh, exciting vegetables, I gravitate towards the warmer months. Then again, that area may grow everything year-round anyway.

Julia Child's Beef Bourguignon...so-so

I just made that for a Christmas party. It was ok. Everyone else loved it, though. I think my expectations were different / too high. The frozen onions were a great idea.

As a post says below me, it is just beef stew. I had had another beef bourguignon that was more of a braise (with a very reduced, sticky sauce), and it blew me away. That was at one of the best restaurants in town.

It looks like they'll be cooking on the wine train out of Napa to Yountville. Perhaps they are cooking at Bottega, or just serving outside of it, as Michael Chiarello is in the episode.
