Oud Sluis, in Sluis, Netherlands: superb seafood, especially the (partially grilled) coquilles saint jacques canneloni, filled with almost raw oisters and lemon marinated chichory (spelling?)/recently been back - WOW. 12 highlights - the most amazing in the constantly high level sequence of balanced exciting surprises was some seabass, marinated (not very sour), made into a canneloni filled with herbs, grilled for maybe two seconds...heavenly

Oud Sluis (NL)!!!, Paul Bocuse, Gio's (Maastricht), Di Cecco (Sienna), Chartier (Paris), Sa Jambina (Callela de Pallafrugel, take the palamos shrimp), some place just outside San Sebastian with great merluza en salsa verde, Beluga (Maastricht), recently had a great experience at De Librije (Zwolle), Muramare in Verona; recently fell in love with Singapore; in general: Palermo and Saigon!
