Turkey brining question

I agree, I love dry brine for chicken and loved it last year for turkey but only did a 24 hour dry brine. This year I plan to give it the full dry brine treatment, do you salt on Sunday?

A 21 lb turkey is snuggling a 7 lb turkey breast and the fridge is threatening to explode so dinner is inspired by a need to remove a few items from the fridge including several cartons of egg whites so dinner will be broccoli, ham and egg white frittata with a trio of cheeses - Asiago, Gouda and Collier's Cheddar.

Slow roasting the turkey: a homily

That was my grandma's "trick." She never used a thermometer, "just wiggle the leg." And yes, it retains moisture incredibly well I literally have no drippings. I also left the bird at room temperature for several hours beforehand so perhaps that made a difference and do a 450F high heat blast for 30 minutes first.

Thanks! I almost forgot about it...woke up this morning "oh hmm I'm on vacation." It's a staycation but I don't mind at all and looking forward to a nice quiet holiday week. I'm on call Thanksgiving so won't be able to go home but Shiitake and I are planning a dinner for two. My meals have been consistently tasty recently but quite repetitive and boring :)

Chuck Roast.... Roasted Low and Slow @ 220* F.....For A Better Pot Roast ?(Pictures)

Yea similar to ribeye. I've had it as steak but I actually have never thought to roast it until I decided on the the cat's Thanksgiving dinner yesterday when I spotted a giant pile of chuck eye roasts at Wegmans (yes kitty will be having steak for dinner). Perhaps I'll give it a try instead of prime rib this year. I can't wait for another superb turkey next week.

Great, thanks. I love fennel and totally wouldn't have thought to add it - sage/Italian style seems like a good angle. I assume you're referring to dried sage?

Bell's, yes, I always forget about Bell's hanging out in the back of the cabinet. I'm not stuffing the turkey with stuffing. I'm actually not making stuffing at all, I'm making stuffing-flavored stuffed mushrooms :) I actually enjoy ground turkey more than ground pork which is why I'm using it instead. It's me and the cat so as long as he's ok with it we're good to go.
