your best kitchen related purchase of 2010

If I ever become unemployed, yes. :)

your best kitchen related purchase of 2010

3 best improvements:

- Immersion blender
- 60" stainless steel commercial work table
- Not purchased, but built from scratch, an outdoor wood-fired oven.

Need a mixer to make one cake. What should I get?

KA Professional 600 for $250 on Amazon, free shipping. Black Friday only.
The rest of the year it'll make for a nice countertop accessory.

How, when and why (if) you started drinking your coffee black

..hehehe...... So I'm kicking back sipping my black coffee at The Coffee Bean on Hillhurst the other day and thinking to myself how glad I am not standing amongst that crowd of people at the condiment bar. One guy dumps half of his coffee out and proceeds to pour 8 ounces of cream followed by 15 seconds worth of sugar into that cup. Holy cow! ...:)))

How, when and why (if) you started drinking your coffee black

I like my life to be simple. I've been drinking my coffee and tea black, no cream, no sugar, since pre-teen. I carry only one credit card, my bicycles are either single speed or fixed gear, my yard is landscaped mostly with succulents (requiring almost no maintenance), I make my pizza with only 2 toppings, and so on...
Driving thru McDonalds for coffee, they look at me funny when I tell them zero sugar zero cream. I like to keep my life simple.

Where do you keep the Kitchen Aid mixer?

I recently set up a dedicated pizza station in one corner of the kitchen and I have my new copper pearl KA 600 Pro right on it, on a large slab of granite where I stretch the dough.

Butcher and Meat Market Terms

Aside from out west most butchers don't know what a tri-tip is.

Sole' Gourmet pizza oven and smoker

Thanks Jimpeterson.
That's 2 racks of spareribs and I let the juices drip down onto some potatoes.
No, there is no damper on my chimney as my wfo is a pompeii style oven. The chimney vent is on the outside of the oven chamber entry.
Well, I am doing pizza and hot chicken wings tonight for the Laker game on tv. Anytime after 6pm is fine.....:))

Sole' Gourmet pizza oven and smoker

I built a 34" wfo and often use it for roasting and smoking a day or to later after doing pizza using retained heat.
As far as oven size is concerned a smaller unit might be more practical if you're only doing pizza. It uses less fuel and can reach pizza temps very quickly.

This is my typical set up using charcoal briquettes and a chunk of wood for smoke starting from a cold oven. A basket of charcoal can burn slowly for hours while keeping the oven temp pretty constant at smoking temps, around 275F. You regulated temperature by leaving the oven door slightly ajar to just allow a small amount of air to keep the charcoal burning slowly.

Kitchenaid Pro or Kitchenaid Artisan Mixer?

That said, I ended up ordering the 600 pro for my pizza dough. I should get it within the week.,

Is Japanese food overrated?

For me, the izakaya is what Japanese food is all about.

Japanese food versus Korean food

All I know is many Japanese restaurants are owned by Koreans here in L.A. but not visa-versa.

Sushi is pretty similar but customers generally associate sushi with Japan for the most part.

Best wing recipe

I usually do about 10 lbs of wings at a time which is so much easier done on an outdoor grill. I will grill them over direct heat to sear then finish them over indirect heat.

OMG- Roasted Cauliflower

Why did I not think of roasting this vegetable in the WFO before? Glad I saw this thread!

Lodge mini cast iron

El Torito restaurants use them for their dips with their appetizers.
My wife thought they were so cute she accidentally brought one home. I scolded her the next morning.

Indoor Venting of Electric Wall Oven

I'm glad I saw this thread. I have a 30 year old Thermador double electric wall oven which I'm looking to replace. This unit vents outside. I had a mishap with this oven a year ago when I accidentally placed a rubber lined steel bowl inside the oven, turned the oven on, and walked away. The thermostat did not trip and the oven was ruined. Toxic black smoke poured out of the outside vent for at least an hour as the oven cooled. I can't imagine what could have happened had this oven been vented indoors.

What are you baking these days? Part IX [old]

Mostly pizza. I made a few hot chicken wing pies last night for our little Halloween party we had going. That's my friend Frank in the cop outfit. :)

Kitchenaid Pro or Kitchenaid Artisan Mixer?

For bread and pizza dough I would go with a Bosch Universal Plus. Home bread and pizza bakers in general seem to constantly have problems with KA mixers.

Dirt Cheap but good wines

I only buy cheap $5 bottles of wine. When I have guests I decant them into a wide bottomed decanter to let the wine breathe and that seems to improve the taste greatly.....and not reveal the label.......

new kitchen counter tops!

Having just completed a wood fired brick oven with concrete slab countertops myself out in the patio, polished countertops in the kitchen as my next DIY project is something I've been seriously thinking about.

new kitchen counter tops!

I've done some outdoor concrete form work and am thinking about redoing my aging kitchen countertops in polished concrete. My wife wants to contract out for granite or quartz. I'm trying to save a few bucks...lol...

So, I got a Kitchen Aid stand mixer....now what?

Don't you like pizza?

What is with the smell at Subway??

The Subways located in Lucy's Lavanderias smell more like detergent and bounce.

Steak - Grill or Pan?

Since I have a charcoal grill, a gas grill, and a wood-fired brick oven right out the kitchen, I go to any one of them first for anything that can be grilled.

Pizza Saga Continues- Help with a Pizza Stone??

I was using the Lodge 14" cast iron pizza pan for a while both in my kitchen oven and on my Weber grill until I built my own wfo.

Putting my refrigerator in the basement

I would stock that fridge up with beer. Isn't that what spare refrigerators are for?
