Should eggs be refrigerated?

I was taught in school to refrigerate your eggs for freshness as this is due to the air pocket. Another way to tell is if the egg floats or sinks and if it has detoriated. Also keep eggs in the carton as eggs can absorb odurs etc.

some basic tips on how to cook salmon?

i find less is more. i salt and pepper, brush with olive oil, cook skin side up for 4 minutes on high heat, then flip and finish in a hot 450-500 degree oven for another 4-6 minutes

same here i also enjoy smoked trout and salmon from tasmania the best.

Global knives breaking/snapping issues?

when I was at work I used a paring knive but at home I have a wusthof utilty knive. Utility knife is your best bet along with chefs knife and bread knife and maybe fillet knife.

Side Suggestions to Pair with Amazing Scallops Please!

when i cook seafood at home I dont like to use strong overpowering flavours i keep it simple and quick. I usually steam scallops with spring onions, ginger, chinese rice wine, light soy sauce and with some greens on the side e.g baby bok choy, asparagus, gai lun.

How to kill a crab?

I was taught put crustaceans in the freezer for 30 minutes or so but with lobster remove antennas and cut through the head with a very sharp blade better than being boiled

Henckels Twin Select, Wusthof Grand Prix, Global, MAC or Shun Stainless?

I am also thinking about purchasing a Shun chinese chef knife but it is very expensive in australia. also looking at Wusthof cleaver. I own Wusthof classic but my next knife will have a shorter blade. Also I dont like henkels knifes bought a paring knife they have gone downhill in recent years but thats my opion I guess.

Stainless Steel cookware question

hello we bought a cheap stainless steel roasting rack from a supermarket but we put over the gas stove to make jus but ithe rack turned an blue black colour. Is this safe or should i throw away the rack?
