My personal faves are Gruner, Toro Bravo, Tasty N Sons and Killer Burger (love their peanut butter bacon burger).

Saturday dinner in Portland (with some requirements)
I would consider hopping the train since lloyd center is in the free rail zone and heading downtown for more options. Jeans are ok pretty much everywhere and I eat out as a single woman just about any where. Little Bird is not a long walk from the train. If you happen to catch the green line, it stops a block away. Check out trimet.org for maps.
Pho (other than Pho Van) in PDX
Pho Oregon on 82nd is my fave. Nice light broth.

The best Burger in Portland, Oregon
Some great photos on extramsg.com. I'm a fan of Killer Burger on sandy, and Gruner which is available only at the bar and I figured out is best ordered to go since it's difficult to get a seat at the bar and I love the tasty burger at Tasty and Sons. A friend recommended the duck fat seared kobe burger at Burnside Brewing which will be the next one I'll be scoping out.
Vanilla extract
Nielsen Massey does do a mexican. Their Madagascar is my go to vanilla. I know a lot of people love mexican vanillas but I'm not as fond of the mexican.
Peanut Butter
I like sunflower seed butter on toast before bed because it doesn't kick up the stomach acid quite like peanut butter does for me.
Peanut Butter
Here in Portland, OR, Killer Burger does a peanut butter, pickle, bacon burger as well as a peanut butter slider and both are awesome. At home, I do a split grilled bagel with peanut butter, raspberry jam and bacon.

Foodie activities in/near Portland?
The one by Portland State University is the farmer's market. A must for foodies. The one under the burnside bridge is Saturday market where you want to go if you want pottery, jewelry or a tie-dye t-shirt but not food.

First date advice; need help
I'm with hh on dessert at Canlis. Went last weekend and had the full dessert menu. Everything was to die for. Still dreaming of olive oil ice cream. Totally worth dressing up for. And the view was beautiful.
Best Pizza in Portland Is?
It's a little old but there's an interesting round table discussion with Ken, Brian from Apizza Scholls and Cathy from Nostrana here.
http://portlandfood.org/index.php?showforum=15
I love Apizza Scholls. They're my fave. Nostrana does some interesting pies that I've enjoyed like their zucchini pie and a sausage pie with white sauce. Both were really good. Let us know what you try and what your thoughts are.
Need Portland recs please
On friday, grab a copy of the Oregonian. In the A&E section, they list the clubs and what artists are playing which days. Jimmy Mak's is not far from the Marriot and some nights the Heathman has jazz. Mary Kadderly is one of my faves when she shows up there. The Candlelight on the other end of downtown advertises blues but from what I've been told recently sometimes it's just cover bands. For blues, any night at Halibuts over on Alberta. Great fish and chips there too. Had a good lunch recently at Kenny and Zuke's. They're always a fave of many folks around here.
Portland Breakfast restaurant off Powell
Little T's Amercian Baker. Went yesterday and everything was great and the bread was amazing. Try "the slab". Awesome stuff.
Suggestions for solo dining in SW Portland
http://www.urbandrinks.com/happyhour/usa/or/portland
This is a good place to start. Hit downtown or the Pearl for options closest to you. Other's will chime in, I'm sure but Kenny and Zuke's always seems to be a hit with people as well as Clyde Common. I enjoy Saucebox. Also read the prior posts in this section. There's lots of tips there as well.
Here's a couple of threads with good info.

Nostrana 2008
I prefer Apizza Scholls if I'm in the mood for just pizza but I do like the interesting toppings at Nostrana. Their zucchini pizza was more interesting than I imagined it would be. Nice bit of spice to it. I've found them overall to be inconsistant. One meal is just spot on and perfect and the next was just good even though I was ordering many of the same items. Pastas have been good there. The outside seats are lovely on a comfortably warm day with a breeze.

I would pass on cafe allora. Look around on the web a bit and you'll see reports of slow and rude service. It's been a few years but that was my experience there. Took us half an hour to get menus and another customer got them after reaching past the waiter who was standing two feet from the menus and had told the man he would bring them to him.
Portland in August?
Country Cat is too far out there from where? If you're downtown, four miles or so straight up burnside to 82nd hang a right, up to stark and hang another right. I agree, it is easy enough to find. And there is no place I've found so far in Portland where I'm uncomfortable dining alone. Hope you enjoy your stay.

Breakfast at Screen Door is really good but yeah, get in line just before they open. Their cheese grits are great and the praline bacon is something you gotta try. Country Cat never seems to have a wait no matter how late we go and they have ham, eggs and grits with red-eye gravy. Haven't had their grits but reports at portlandfood.org say they rock. And I've loved every breakfast I've had there. Simpatica is always a great brunch choice as well.

Urban drinks is a good resource for websites and menus. Look at Old Town or the Pearl for places within walking distance.
JW Marriott Desert Ridge Restaurants
I've had several good meals at Roy's and at Tuscany. Everyone in my group really loved the Osso Buco at Tuscany and being the child of a fisherman and total salmon snob, I was impressed with the salmon I had there. I missed the meal at Meritage but someone who was at both meals at Tuscany said his meal at Meritage was his best meal at the Desert Ridge hands down and I do trust his opinion. Blue Sage was okay for basic breakfast but I wouldn't do much else there other than maybe the fruit tarts in the case to go. Had lunch up by the pool and it was so-so, had burgers at the Vista lounge and they took a long time and once again were just okay, nothing fabulous.
