Last Minute Help
I will be in New Orleans with two friends in about 8 hours. We will be spending the weekend wandering around the city and searching for tasty things to eat and drink. We are adventurous and so the only consideration is that we won't have reservations. That said, it would be great to experience stuff that you can only get/is best to get in New Orleans.
I would love to hear about your favorite places to walk in and grab a bite.

You should enjoy Jean Georges.
It is worth noting that the 4 course menu at Eleven Madison Park is only $125 (plus drinks, tax, and tip) and so similarly priced. The inside of the restaurant is not cold at all. In fact, it has less of a corporate feel than Jean Georges.

I realize that my paragraph wasn't too clear. EMP and Per Se book up when the reservation books open, Jean Georges and Daniel do not, so you are totally right to say you can sometimes luck into a last minute reservation at Jean Georges, which I prefer to Daniel.

There are a number of good options in NYC, though the best of them will be booking up rapidly, unless your trip is in late June. Here are a couple of suggestions.
I much prefer both Eleven Madison Park and Per Se to either Daniel or Jean Georges. Both of those fully book a month in advance and so you would have to be coming in mid or late June to get a reservation.
Other places you might consider include Corton, The Modern, Kyo Ya, Picholine, and WD-50. Check out their websites to get a feel for the menus and ambiance, as they all are pretty different from one another. Otherwise, enjoy your trip!

Tip is included at Per Se. For nearly every other restaurant in NYC, 20% of the bill is standard. Some tip before tax, while others tip on the tax. Some tip a smaller percentage for alcohol, others do not.

Like Per Se but not stuffy
I think what Sneakeater has thoughtfully pointed out is that the meaning of "stuffy" varies from person to person.
Many (myself included) don't find "white table cloths" or "several" servers or trousers and a jacket stuffy. Others would find it terribly fussy, equate fussiness with elitism, and declare the place stuffy. Some might find a no substitution, eat-what-I-tell-you policy the height of arrogance and therefore be uncomfortable at Brooklyn Fare (note that I am talking only about the soon-to-be-opened one in Manhattan), but find familiarity in the serene, hushed tones of Le Bernardin and declare it not stuffy at all.
I don't find Per Se or EMP or Ko to be "stuffy" in that I am very comfortable at all three, but OP's results may vary. That is why we would have to know what he or she means by "stuffy" before we can guide him or her to the right restaurant.

Per Se is both less stuffy than and far better than Daniel and Jean Georges (and better than and less stuffy than Le Bernardin). I think the only place worth mentioning in the same breath is EMP. If the OP is willing to take a step down the ladder, he or she might also try somewhere like Corton.
The problem with answering the question is it is hard to predict how much "outstanding food" the op is willing to sacrifice for casual comfort. It would be far easier to help if the OP shared a few places that he or she has been and their relative benefits and drawbacks.

18 clams is "a lot" per person? I regularly slurp down dozens of the things each sitting, but maybe that's just me.

I agree with your general premise, that it is not all its cracked up to be, but if there was no hype, I would think it well above average (but still not great).

I guess it depends on what you mean by "better." If I want a plate with tons of different stuff on it so as to appreciate subtle differences in the cut or cures, then Craft can't provide that. As I said, Craft provides "high-quality" stuff, but there is usually only 4 or 5 options. I generally prefer Craft for a number of reasons, but the opportunity to try a variety of stuff at Bar Boulud sometimes wins out.

so, Bar Boulud has the better charcuterie and average drinks, craft has high-quality, but minimal numbers of, charcuterie, and far, far better cocktails. i enjoy both. You probably will too.
Daniel or EMP?? Which is a better experience?
My terrible service at Daniel was accompanied by consistently average and sometimes bad food. We had a five top and, other than the pretty darn good desserts, no one at the table thought a single dish was good. Things were consistently under seasoned. At least half of the dishes were unfocused, with unnecessary ingredients and ridiculous flourishes. A few things weren't even properly cooked (my fish was over, for example). To say things were "carefully prepared" would be an understatement.

I have eaten at both more than once. EMP has provided me with some of the most memorable dining experiences I have had at a white-tablecloth place, and consistently ranks in my top two in NYC for service (Per Se being the other). My fiance trailed in their kitchen for an evening and had nothing but very positive things to say about the BOH atmosphere as well (no, she never worked there, so I assume I can post about the place). It is a wonderful restaurant top to bottom.
All I will say about Daniel is that, on a very special occasion, it provided my family and I with the single worst fine-dining experience of my life. It was bad enough that, despite better prior visits, I will never return, and the staff's total lack of concern for our happiness and enjoyment forces me to warn others of my experience whenever advice is solicited.
So, to me, the choice is clear: Of my many meals at EMP, I have never had less than a very good experience and a few times I have been absolutely blown away. Go there. You will be happy.

I'm with you on famous sichuan and agree that Big Wong has stuff on the menu that is good. i use to go to NGB with groups from work and we would order pretty widely on the menu. i think it is a reasonable choice for people trying to experience accessible chinatown treats without the over-sugared gloop often served elsewhere. We treated Big Wong the same way, but ended up going to NGB more often.

I think this is a pretty good list. I would say:
The food is consistently better at the Xi'an Famous one under the bridge. Get it to go and eat in the park.
I have found Old Sichuan to be on a downward slope (or at least did during last year when I ate there some-what regularly).
I prefer Nice (New) Green Bo to Big Wong

Bar recommendations near CRAFT?
This. They have an awesome cocktail list and the bartenders are top-notch. If Sean is there, hand him the reins and you will be more than impressed.
Rains Law Room is also a good choice, but there will likely be a wait, depending on day and time. I have twice given up on the wait and simply walked over to the bar at Craft.

I generally dislike places that are or try to be "hip," but my main gripe with Marea is the same as RGR's: If you run a seafood restaurant, you have to be able to cook fish. They consistently fail to do that well.

Is your only concern that you got a reservation? If so, you should relax. A lot.
