What's For Easter Dinner?
Just 2 of us for Easter supper this year. Luckily my employer gave me a beautiful spiral ham at xmas that I froze. I'll make that and add in my own crunchy ham glaze along with potatoes au gratin and steamed asparagus - nothing over the top but good! Dessert will be carrot cake cupcakes.
Corned Beef Test Results.....Slow Baked and a Braise, For St. Paddy's Day.
I did the braised/baked method tonight for dinner - DELICIOUS! I will never boil it again!
I soaked the corned beef for 24 hours, changing the water every 3 hours. I then braised it in a mixture of beer (all I had was hefeweizen) and water with a small spoonful of beef base and pickling spice. I braised it for 4 hours on 325, drained the liquid (saved for boiling carrots and potatoes) and baked for another 2 hours. It was crispy on the outside and it fell apart when I cut it...for me, it was the best of both worlds.

Spices in Tidewater
Second this. I love Penzys. If I need something last minute though, I like Fresh Market..they have little baggies of spices that are always fresh.

Doubling Kristen King's Almond Squares
Hey Everyone! I'm still so happy to hear that everyone likes my recipe as much as I do :) This recipe is easily double and yes, a 9x13" pan is best. And like Buttertart said, it will take some extra time.

Appetizer Meatballs?
I'm attending a pot luck dinner on Saturday and I was told to bring an appetizer meatball. I've never been a fan of Swedish meatballs etc., but I'm willing to make some if there isn't something better, something different,out there in the way of appetizer meatballs. Here's the final cookie - love them! I made peppermint gumdrops and peppermint, orange and cinnamon roll flavored suckers. Oo, can't wait to see those clouds ;)

Today is day 2 in baking hell. I love baking, but I always go over board! Yesterday I made homemade gumdrops and lollipops. Between today and tomorrow I will make: Italian Almond Cookies, Peanut Butter Blossoms, good ol' Chocolate Chip Cookies, Italian 7 Layer Cookies and Hershey's Pretzels Candies....oh, and Chex Mix but that doesn't really count. Ugh, what did I get myself into?? :) I'll post pictures later!

Heavy Lunch - Route 1 Southern Maine
My husband and I are taking a day trip to Maine next Saturday and we're taking route 1 up to Kennebunkport. I'm looking for a place for a heavy-ish lunch (can double as dinner too). I haven't been to there in 5 or 6 years so I don't know what's good anymore. We like any type of food, but since we're in Maine seafood would be preferred.. price doesn't really matter. Any recs for me would be great.
Ugh, my husband just said he wants me to take him to Freeport at some point too..Any lunch recommendations for there either? I'll choose a couple of places and see where we end up I guess!
